Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper and set it aside.
In a bowl, mix the dry ingredients: flour, baking soda, cornflour, and salt. Set aside.
1 ¼ cups All purpose flour, ¼ tsp Baking soda, 1 tsp Cornflour, ½ tsp Salt
In another large bowl, whisk the butter and sugar until combined.
¼ cup Butter, ½ cup Brown sugar, 2 tbsp Granulated white sugar
Add the egg and vanilla extract, then beat for a minute.
1 Egg, 1 tsp Vanilla extract
Add the dry ingredients and mix until just combined. Fold in the chocolate chips and raspberries.
⅓ cup White chocolate chips, ¼ cup Frozen raspberries
Make 12 equal-sized balls and place them a couple of inches apart on the baking sheet, as they will flatten/spread when baked.
Bake for 12 to 15 minutes or until golden brown on top. Let the cookies rest on the baking tray for 5 minutes.
Transfer them to a cooling rack and let them cool completely.
