    DUM ALOO

    Dum Aloo is very popular Indian dish, prepared using baby potatoes. I have shallow fried the baby potatoes and then cooked it in slow flame in gravy with spices. I have served this dish with Jeera Rice .This dish is perfect accompaniment for Indian Rice/Rotis. I must say this dish is very rich, super delicious and worth it.

    Preparation time : 30 minutes
    Serves : 3

    Ingredients for Dum Aloo

    Baby Potatoes - 14
    Cumin Seeds - ¼ + ¼ tsp
    Vegetable Oil - 2 tablespoon  +1 tsp
    Methi / fenugreek seeds - 3
    Broken cashews - 4
    Coriander leaves - 5 strands
    Ginger strips - for garnish
    Red chilli Powder - ½ tsp
    Sour cream / yogurt - 2 tsp
    Salt to taste

    For the Gravy
    Cumin seeds - 1 tsp
    Vegetable Oil - 2 tsp
    Dry Red chillis - 4 to 5
    Cloves  - 2
    Cardamom seeds - 4
    Cinnamon stick - ½ inch
    Brown sugar - 1 tsp
    Broken cashews -  8
    Onion chopped  - 1
    Tomato  - 1
    Ginger - ½ inch
    Garlic Cloves - 5
    Turmeric Powder - ¼ tsp
    Asafoetida / Hing - ¼ tsp
    Coriander Powder - 1 tsp

    Steps to Prepare Dum Aloo
    • Peel the skin of baby potatoes and microwave for 4 minutes. (You can cook the potatoes in any desired way.)
    • Heat oil in pan. add  Â¼ teaspoon cumin seeds and baby potatoes and shallow fry till it develops some color. Transfer it to plate.
    • Heat 2 teaspoon oil . Add the ingredients mentioned in 'For the gravy' except the tomatoes and saute till onion becomes translucent.Finely add the tomatoes and mix well for a minute. switch off the flame. Allow it to cool down and grind it to form smooth paste
    • Heat tablespoon of oil in pan. add ¼ teaspoon cumin seeds, methi seeds, cashews, ground paste, coriander leaves, red chilli powder , sour cream, baby potatoes and  little water for desired consistency and cook in medium-low flame for 5 to 10 minutes. That is till the potatoes absorb the gravy.
    • Dum Aloo is now ready. Garnish it with ginger strips and coriander leaves. Serve hot and enjoy.
