    VEG SIZZLER WITH MUSHROOM AND CHEESE

    Veg Sizzler With Mushroom and Cheese is delicious, flavorful, complete meal and my family's favorite. A plate with full of veggies, rice, patties, sauce and fries.

    After marriage if there is anything that I  have missed after my mom's food, then its sizzler from my two favorite restaurants in Mangalore 🙂 So I do it more often, specially on weekends / holidays and recreate those beautiful memories.

    Only thing when preparing sizzler is that  you need to plan it ahead because the recipe is lengthy, but let me tell you its very easy and worth it. Assembling the sizzler is always a treat to watch.

    Veg Sizzler With Mushroom And Cheese

    Preparation time : 45 minutes to 1 hour
    Serves : 4

    Ingredients for Veg Sizzler With Mushroom And Cheese

    Cast Iron Pan
    Mushroom Cheese Rice
    French fries
    Cauliflower fries (optional)
    Cheese for garnish -  1 tsp
    Spring onions for garnish

    For the patties - Makes 3 patties
    Potatoes boiled and mashed - 2
    Mushroom finely chopped (fresh / canned)  - 4 oz
    Salt - ¾ tsp
    Red chilli powder - 1 tsp
    Swiss Cheese slices - 2 to 3
    Vegetable oil for shallow fry - 2 tablespoon + 1 tbsp

    For the Sauce
    Tomato sauce - 8 oz ( 2 cans)
    Garlic cloves - 2
    Vegetable oil - 1 tbsp
    Dried Basil leaves - ½ tsp
    Red chilli Powder - ½ tsp
    Red pepper flakes - 1 tsp
    Water - ½ cup
    Salt to taste

    For the Stir Fry
    (chop all the veggies lengthwise)
    Onion - 1
    Garlic cloves - 3
    Jalapeno/ Green chilli - 1
    Celery - 1
    Cabbage - 1 cup
    Capsicum - 1
    Carrot - 1
    Apple cider vinegar - 1 tsp
    Soy sauce - 1 tsp
    Worcestershire sauce - 1 tsp
    Red pepper flakes - 1 tsp
    Vegetable oil - 1 tbsp
    Salt to taste

    Steps to prepare Veg Sizzler With Mushroom And Cheese

    For the patties

    • Heat oil in non-stick pan.add the finely chopped mushrooms and salt and saute till mushrooms are cooked. If you are using canned mushrooms then ignore this step.
    • In a bowl add the mushroom, potatoes, red chilli powder, salt and mix well to form thick dough like mixture.
    • Make the patties of desired shape, fill the center of each patties with cheese slice.
    • Heat tava/griddle. place the patties. add oil around the edges and cook them in medium flame till they become golden brown in color on both the sides.

    For the Sauce

    • Heat oil in pan. add pepper flakes and garlic cloves and saute till it becomes golden in color.
    • Add the tomato sauce, water, dried basil, chilli powder, salt to taste and bring it to nice boil.

    For the Stir Fry

    • Heat oil in pan. add red pepper flakes, onion, garlic, jalapeno and saute till onion becomes light in color.
    • Add all the other veggies now and cook for 2 to 3 minutes till they are crisp.
    • Add soya sauce, vinegar, Worcestershire sauce and cook for another one minute. Switch off the flame.

    Assembling the Sizzler

    • Heat the sizzler plate till hot, spread the butter (you can also place the outer layer of cabbage instead of the butter)
    • Add mushroom and cheese rice on half of the sizzler plate , stir fry on the other one forth of the plate.
    • Place the french fries and cauliflower fries on remaining one fourth of the plate.
    • Pour the sauce prepared and garnish it with some more cheese if desired.
    • Veg Sizzler with Mushroom and Cheese is now ready. Serve hot and enjoy

     

    Tip:

    • If you do not tomato sauce then puree the tomato and follow the recipe.
    • Use vegetables of your choice for the stir fry.
    • Adjust the spices as per your taste.
