1 tablespoon Ghee, 30 Seedless dates, 2 tablespoon Almonds or Badam, 2 tablespoon Cashews
  • Add this to a blender along with ¾ cup of milk and blend it to a smooth paste. Keep this aside.
    ¾ + ¾ cup Milk
  • With the same pan back on medium heat, add 1 teaspoon ghee, followed by cashews. When cashews turn light golden in color, add raisins, and saute until raisins plump up. Transfer this to a plate and set it aside. This step is optional. You can skip the garnish entirely.
1 teaspoon Ghee, 1 tablespoon Cashews, 1 tablespoon Almonds
  • To the same pan, add the dates paste with 1 cup water and remaining milk, and bring it to a boil. Simmer for 4 minutes. If the mixture thickens, you may add ½ cup of water and bring it to a simmer.
  • Finally, add cardamom powder, mix, and switch off the flame. Transfer it to a serving bowl. Garnish with sauteed raisins and nuts if desired and enjoy.

Notes

  • I have used fresh dates in the recipe.
  • If kheer thickens and you end up adding more milk, adjust the sweetness by adding sugar and jaggery.
