Aloo Tikki Chaat, also known as Ragda Pattice, is a delicious chaat where the mashed potato patties (tikkis) are served with peas curry (ragda), garnished with sweet and spicy chutneys, sev, onion, and tomatoes. Every bite is loaded with sweet, spicy, and tangy flavors.

Aloo Tikki Chaat | Ragda Patties - Indian Street Food

For the patties or tikki
- 3 Potatoes boiled and mashed
- ¼ cup Green peas frozen or boiled
- 2 Green chilies finely chopped
- 1 inch ginger grated
- 1 teaspoon Lemon juice
- 1 teaspoon Chaat masala
- 1 tablespoon Coriander leaves
- ½ teaspoon Red chile powder
- 1 tablespoon Cashews chopped and roasted (optional)
- ¼ cup Poha powder or Breadcrumbs optional
- Salt to taste
- Oil for cooking patties
For serving
- Ragda green peas gravy
- Patties as needed
- ½ cup Onion finely chopped
- ½ cup Tomatoes finely chopped
- Coriander mint chutney as needed
- Dates tamarind chutney as needed
- ¼ cup Coriander leaves finely chopped
- 1 cup Sev homemade or store-bought
- 1 teaspoon Chaat masala
Instructions
- I generally prepare this aloo tikki chaat or ragda patties as a build-on recipe when we have chaat series at home.
- After making masala puri, if there is leftover ragda or green peas gravy, I make this chaat.
- Or after making samosa, if there is leftover filling, this chaat can be made.
Making of the patties or tikki for chaat
- Add the mashed potatoes, green peas, chilies, ginger, lemon juice, chaat masala, coriander leaves, red chile powder, cashews, and salt to taste and mix well.3 Potatoes, ¼ cup Green peas, 2 Green chilies, 1 inch ginger, 1 teaspoon Lemon juice, 1 teaspoon Chaat masala, 1 tablespoon Coriander leaves, ½ teaspoon Red chile powder, 1 tablespoon Cashews, Salt
- The mixture should be non-sticky. If it is sticky, then add poha powder or bread crumbs. Else, skip it.¼ cup Poha powder or Breadcrumbs
- Make tikki (patties or cutlets) of the desired shape.
- Heat the tava or griddle. Drizzle oil.Oil
- Pan-fry 5 to 6 tikkis on medium flame till they become golden brown on both sides.
Assemble ragda patties or aloo tikki chaat
- Arrange only when you are ready to serve.
- On a serving plate/bowl, place the pan-fried pattice (1 or 2).Patties
- Add laddle full of green peas or ragda gravy. You can also crush a few puris if desired.Ragda
- Top it with tablespoon each of sweet dates chutney and spicy mint chutney.Coriander mint chutney, Dates tamarind chutney
- Garnish it with the desired amount of onion, tomato, coriander leaves½ cup Onion, ½ cup Tomatoes, ¼ cup Coriander leaves
- Add sev and sprinkle chaat masala. Serve immediately and enjoy.1 cup Sev, 1 teaspoon Chaat masala
Notes
- Vary the spices as per your taste.
- Add the chutney and garnish as per your taste. You can also add grated carrots, pomegranate, red chile powder, and black salt if desired for garnish.
- Chaats taste good when they're hot and served immediately. So heat ragda or masala and assemble when you are ready to eat.
- To make poha powder, add it to a mixie jar and blend it into a coarse powder.
- Instead of aloo tikki, you can also place samosa to make samosa chaat.

Ragda patties (pattice)
Ragda Pattice is a popular street food from Maharastra (Mumbai) and Gujarat. Every chaat center serves this aloo tikki chaat and have its own version. Ragda means peas gravy, and patties mean potato cutlets or mashed potato cakes.
To make ragda patties or aloo tikki chaat, you need sweet chutney made with tamarind and dates, spicy green chutney made with coriander and mint, potato patties or tikki, peas gravy, onions, tomatoes, and sev.
How do I make Indian chaat at home?
Making chaat is a build-on recipe. Here is how I do my chaat week at home to avoid stress.
Day 1: I generally prepare puris, sev, dates tamarind chutney, and coriander mint chutney .
Day 2: Make masala puri, Bangalore street style.
Day 3: Sev puri and papdi chaat with masala puri gravy.
Day 4: Finally, I make the aloo tikki chaat or ragda pattice with leftover gravy. Another occasion where I make aloo tikki chaat is when I have leftover samosa filling.
