Aloo Tikki or Potato patties are vegan, quick and simple, easy-to-make snack recipe prepared using potatoes, peas, and spices.
This recipe is prepared using leftover samosa filling and is pan-fried instead of the traditional deep fry or shallow fry method.
What is Aloo Tikki?
Aloo means potato, and Tikki means patties or cutlets or croquette. Potato cutlets or patties made with mashed potatoes, green peas, and some aromatic spices. These are the Indian version of hash browns or mashed potato cakes.
Some variation to tikki is stuffing it with lentils, nuts, paneer, cheese, etc. I generally prefer to add green peas or sweet corn kernels in my aloo tikki recipe.
These patties can be served alone, with tomato ketchup, spicy mint chutney, or sweet dates chutney.
There are a number of recipes you can make with this dish.
- aloo tikki chaat or ragda pattice, a popular street chaat or street side food in India,
- use it between bread slices to make aloo tikki sandwich
- make aloo tikki burger with burger buns
- aloo tikki can also be served with chole
- make aloo tikki chaat with dahi or yogurt.
I personally prefer pan-fried tikkis over deep-fried or shallow-fried tikkis because I don't have to worry about binding, breaking up in oil, or absorbing too much oil. Even if you prepare everything right, sometimes the variety of potatoes you use may be the culprit for the entire dish to go wrong.
Since I have not used any onion, garlic, or flour, this recipe can easily be prepared for fasting, upvas, and vrat days.

How to make aloo tikki | potato patties | Mashed potato cakes from leftover samosa filling? How to make aloo tikki from scratch?
Step I
- Boil potatoes in any way you prefer (stovetop, pressure cooker, instant pot, or microwave). I generally place a trivet in a pressure cooker filled with enough water and then place the bowl with potatoes and pressure cook for 3 to 4 whistles. After the pressure releases naturally, peel the skin of the potatoes, roughly chop if needed and keep them aside.
- In a pan, add oil, coriander seeds, cumin seeds, fennel seeds, and hing, and saute until this sizzles on medium flame.
- To this, add ginger and green chilies and saute for another 30 seconds to 1 minute.
- Now add potatoes, green peas, garam masala, chaat masala, red chile powder, salt, and coriander leaves, and using a potato masher, nicely mash till everything is well combined.
- Switch off the flame and let the mixture cool.
Step II
- Once the mixture cools down, take 2 to 3 tablespoon of the mixture and shape them into tikkis, patties, or cutlets of desired shape and thickness. Check the video here on making aloo tikki or potato patties.
- You can flatten it now or while cooking on the pan. Since I am pan frying, I did not bother to fix any small cracked edges while forming patties. If you want patties to be a perfect round, you are free to do it 🙂
- Heat a nonstick pan, tawa, or skillet on medium flame.Â
- Place the tikkis, drizzle oil (for flavor and to obtain crispy patties upon frying), and if you prefer an even more healthy version, you can even skip the oil.
- Once it is cooked and becomes golden on one side, flip and cook on the other side till it is crisp and golden brown. You can press each tikki lightly with a spatula if desired once you flip. Check here for more details.
- Repeat the process for the remaining tikkis.
- Aloo Tikki or Potato Cutlet is ready. Serve with any chutney like mint chutney, dates-tamarind (imli) chutney, or even tomato ketchup, and a hot cup of coffee or tea.
How to make Aloo Tikki Sandwich or Aloo Tikki Burger?
Toast your bread or bun with butter or olive oil. On one side of the bread, spread mint chutney, and place one or two tikkis, depending on how thick or thin they are. Spread a layer of tomato ketchup and cover it with another bread slice or bun.
To make it more filling, you can add veggies like lettuce, cucumber, onion, tomato, etc., and spices like peri peri for extra flavor.
How to make aloo tikki chaat?
If you have mint chutney and dates chutney, you can prepare almost any Indian chaat recipe.
The first method of preparing aloo tikki chaat - place aloo tikkis in a bowl, add chole or chickpeas masala, followed by dates chutney and mint chutney, and then garnish with finely chopped onions, tomatoes, sev, and coriander leaves.
The second method of preparing aloo tikki chaat - In a small bowl, whisk a little dahi or yogurt with salt and sugar. Place aloo tikkis in a serving bowl, drizzle seasoned yogurt from above, add dates chutney and mint chutney. Garnish with finely chopped onions, tomatoes, coriander leaves, and sev. Serve immediately and enjoy.
Can I make tikki ahead of time and freeze?
Yes. You can shape the tikkis using the cooked potato-peas mixture, spread them in a single layer on a baking sheet lined with parchment paper and then freeze them. Once they become firm, transfer them to a Ziplock bag. Thaw the frozen aloo patties to room temperature and pan-fry them as and when required.
Air Fryer Aloo Tikki or Potato patties or Veg Cutlet
Once you form the patties or cutlet of the desired shape, preheat the air fryer to 200 degrees C (400 degrees F)Â for 5 minutes. Place around 6 to 7 patties. Brush them with oil. Cook them for 10 to 12 minutes until they are crisp and golden brown on the outside, flipping halfway through and brushing with oil if desired. The time may vary depending on the thickness of the cutlets.
