French vs. American Omelette
French omelet is rolled into a cylindrical shape before serving and has a soft and moist interior. During the cooking process, you will have to shake the mixture in the pan constantly. The exterior of the cooked omelet is pale/bright yellow. French Omelets are generally served plain, but sometimes they are garnished with chopped chives or green onions or cracking of black pepper. You can add fillings during cooking or by making a slit at the top of the cooked omelette after plating.
American Omelette is folded in half and is denser with crispy edges. Here we do not shake the pan, and we allow the egg mixture to firm up around the edges and set. The filling is added on one side when the egg mixture is almost set and then folded over.
Omelets vs. Frittatas
Omelets are entirely made on the stovetop using a non-stick frying pan. The eggs are folded around fillings like tomato, cheese, mushroom, spinach, etc. Omelets are typically made to serve one at a time and best when served immediately.
Frittatas, also known as Italian omelets, are started on the stovetop and finished in the oven. The fillings are mixed with the eggs in the pan and not folded over. In a cast-iron pan, the eggs are cooked along with the fillings until the outer edge is set. The pan is then transferred to the oven for final cooking. The frittatas are then cut into slices and served. The best part about frittatas is that you can serve them at room temperature as well. Ingredients for Spinach & Mushroom Omelet or Breakfast Omelette
4 Eggs
½ Onion, sliced
6 to 8 mushrooms, sliced
1 handful of Spinach
2 cheese slices (Cheddar, Gruyere, or any melting cheese of your choice)
1 tablespoon Oil for greasing
Salt (adjust to taste)
¼ teaspoon Pepper (adjust to taste)
1 teaspoon Herbs for garnish (parsley, cilantro, or basil) - optional.
How to make spinach mushroom omelet or breakfast omelette?
In a pan on medium heat, add half tablespoon of oil. Add onions and mushrooms and saute till they develop some color. Transfer this to a plate. Set aside.
In the same pan, add spinach and saute until wilted. Transfer it to the plate and set it aside.
Break and add four eggs, salt, pepper, and whisk in a bowl until the eggs are pale yellow. Beating is done so that the omelette becomes fluffy upon cooking.
How to cook an Omelette?
Grease the pan with oil. Add half of the beaten egg and swirl the pan quickly to distribute the mixture evenly.
Once the omelet is almost set, and no visible egg liquid remains, add half of the onion mushroom mixture and spinach over half of the egg. Add cheese slice and fold the remaining half over and cook for 1 minute or until cheese has melted.
Transfer this to a serving platter and repeat the same steps to make a second omelet using the remaining egg mixture and filling.
Garnish the omelets with fresh herbs if desired.
Some tips while making omelet -
Always keep the pan on medium to medium-low, so the omelet does not develop a dark brown color.
How to flip an omelette?
You can carefully flip the omelette using a spatula once the top side is set and cook the flipped side for 30 seconds only if desired. I have not done it and especially don't do it when I add fillings. I flip the omelette only when doing the plain ones.
Ideas for Breakfast Omelette Filling
Spinach and mushroom are my all-time favorite combo, but here are a few that my family loves, and you can try them as well.
- Spinach, tomato, and feta cheese
- Avocado & leafy vegetables like spinach, arugula, or kale
- Avocado & goat cheese
You can also mix and match any of these ingredients as filling to the omelet. Cheddar or Gruyere, diced ham, crispy bacon, sauteed mushrooms, bell peppers (capsicum), caramelized onions, tomatoes, fresh herbs, or if you have any leftover sausages or kebabs, add them.
