Cheesy Potato Mushroom Quesadilla is an easy-to-make, delicious appetizer or snack where fresh homemade tortillas are topped with your favorite ingredients and toasted until crispy.

If you are using store-bought tortillas, this recipe hardly takes 10 minutes to prepare. If you want to make this recipe but not don't want to roll tortillas or if tortillas are not available in your local store, then you can even use chapati, pulka, naan, kulcha, paratha, or any other flatbread.
My boys love cheese, potatoes, and mushrooms. I combined all of these to make quesadillas instead of their favorite pizza this time 🙂 Change is always good, right?
All you need to do these quesadillas are some potatoes, onion, mushroom, shredded cheese, tomato sauce (pizza sauce), and any spicy sauce like sriracha or chili sauce for a burst of flavors.
Since this travels well, it is a good recipe for potluck, picnic, or even kids lunch boxes and office lunchboxes.
Ingredients for Cheesy Potato Mushroom Quesadilla
1 tablespoon Butter
½ Onion, finely chopped
4 to 5 Mushrooms, finely chopped
Salt, to taste
1 teaspoon Curry powder or Garam masala powder
2 Large Potatoes, boiled and mashed
6 Homemade or Store bought Tortillas
Oil for pan-frying
Chili sauce or Sriracha sauce, as needed
Tomato sauce or Pizza sauce, as needed
1 cup Mozzarella cheese, shredded (200g)
How to make Veg Taco Mexicana or Cheesy Potato Mushroom Quesadilla
I first made tortillas and then started the filling. You can check my recipe on HOMEMADE TORTILLAS here. If not, use store-bought tortillas or any flatbread of your preference.
In a pan on medium heat, add butter. Once the butter has melted, add onion and saute till translucent.
Add finely chopped mushrooms and saute till it's cooked through. Add salt, curry powder, and switch off the flame. You can add chilie powder for heat if desired.
In a bowl, add mashed potatoes and sauteed ingredients from above. Mix well and keep this aside.
How to fill a quesadilla ?
Take one tortilla at a time. Spread 1 teaspoon of chili sauce and pizza sauce as shown in the video. Add cheese as desired on one side of the tortilla, followed by a thick layer of potato mushroom mixture and some more cheese. Fold over the other side of the tortilla. Check video for more details
How to cook quesadilla?
In a pan on medium heat, add oil and place the tortilla. When it becomes golden on the underside and cheese has melted, flip and cook it on another side. You may drizzle oil if needed.
Repeat the process for the remaining mixture and tortilla. Serve hot and enjoy.
Tips:
Because I serve this especially to my kids, I have not added chile powder to the potato mixture. You are free to add it along with curry powder.
You can be very flexible with the type of spices you add.
Also, feel free to add bell pepper or capsicum, corn, black beans, or spinach while preparing the filling.
Can I make quesadillas ahead of time?
Yes. Just like burritos, you can assemble and freeze until ready to use. When needed, you can thaw and pan-fry them or even bake them.
