Jackfruit Dosa is a sweet dosa from South Indian cuisine made with rice, coconut, jaggery, and ripe jackfruit. This Indian breakfast is aromatic and packed full of flavor and is also vegan & gluten-free.

Dosa with ripe jackfruit
The natural sweetness of the jaggery, paired with the richness of the coconut and the earthiness of the jaggery, make this dosa irresistibly delicious.
Jackfruit dosa is also known as halasina hannina dose or gujje dose in Kannada, chakka dosa in kerala, ponsa polo in Konkani. Unlike other dosa, no fermentation is needed, and it is popularly made during monsoon when jackfruit is in season and for festive treats.
Packed with jackfruit's tropical aroma, this dosa can be served for breakfast, evening snack, or even as prasadam.

Ingredients
Rice: dosa rice, idli rice, or any normal cooking rice will work
Jackfruit: ripe jackfruit is used.
Coconut fresh, frozen, or dry.
Jaggery: to taste
Oil: or ghee for cooking.

Making of dosa batter
- Wash and soak the rice for 2-3 hours. Drain them.
- Add drained rice, jackfruit, coconut, jaggery, salt, and 2 tablespoon water in a mixie jar and grind to smooth batter.
- Transfer this to a bowl. Add water little by little and adjust the consistency of the batter. It should be medium thick. Dosa batter is ready to use at this point.
How to cook dosa?
- Heat dosa tawa or a non-stick pan.
- Pour a laddle full of batter and gently spread in a circular motion to form a thin dosa.
- Drizzle oil or ghee. Cover and cook on medium flame.
- Flip and cook on the other side when the bottom becomes golden brown.
- Serve with ghee or butter, and enjoy.
Tips
- Adjust jaggery based on the sweetness of ripe jackfruit.
- You can add one or two cardamom pods while grinding for additional flavors.
- You can add roasted sesame seeds or cashews for crunch.
- Any leftover batter can be stored in a refrigerator for 1-2 days.
- If the dosa tawa is greasy, then you will not be able to spread thin dosas, and it will stick to the laddle. Make sure you wipe away any excess oil before spreading dosa batter.
- Too much jaggery or coconut than needed may make your dosa stick to the pan. In this case, add rice flour to the batter and adjust accordingly.
