Apple Fritters are crunchy and light, sweet and tart fried snacks that will literally melt in your mouth. It is served with a light drizzle of sugar glaze making these perfect little fall treats.
Apples are one of my favorite Fall Fruit
Apple is one of my favorite fruit since childhood. It has a lot of health benefits, is low in calorie and keeps you full. I was mostly accustomed to eating apples as a fruit, and occasionally in a fruit salad. I did not know you can cook so may dishes with it until I came to the United States. I saw lot of apple recipes here and was excited to try. I have, since, used it in several baking recipes, making jams, sauces, compotes, fruit butters, and in fresh salads.
When I visited our local farmer's market last week,
I saw these beautifully glazed apple fritters and was almost about to buy them. However, I got distracted by a telephone call - and I walked away to attend it. By the time I hung up the call, I had reached the fruit aisle. Immediately I noticed that apples were on sale. The last time they were on sale I bought a big batch of apples to prepare apple butter and few other delicacies. This batch of apples looked fresh and succulent, and when I spoke to the gentleman at the store front he told me that those apples were harvested just the previous evening. I was super excited! He also had several ciders and ales for tasting - and both my husband and I had a great time tasting those drinks and learning about his farm and his business.
Well after all the chatting we bought several varieties of apples, and while I was buying them I began planning how I would use them. We had a big Columbus Day potluck+barbecue to attend at our close friends house, so I knew I would prepare 2 or 3 of my signature apple pies, a bowl of sweet and tart apple relish for burgers, and a simple Manglorean style fruit salad.
My first try on homemade apple fritters from scratch
I then remembered the apple fritters that I had laid my eyes on at the entrance of the market - and I then decided I was going to prepare some apple fritters at home instead of buying them. On our way back I discussed my apple cookout plans with my husband. He was delighted to know I was planning to prepare some apple fritters for us. He being kitchen enthusiast was more excited than I was. He made me sit and relax and prepared a small batch of fritters for both of us. As soon as I had the first bite I ordered him to write down the recipe on a scratch pad - as these fritters were better than any apple fritters I had ever had. Well, if you are thinking why I ordered him, its because when he is in the kitchen he goes free style - adds little bit of this and pinch of that and makes his dish taste super delicious.
And when I ask him for the recipe
he almost always doesn't remember the ingredient amounts he had added in the recipe - and I usually can't replicate it when I try on my own. This time it was different - pat my back, thank you :). With the same recipe that my husband jotted down, I tried another small batch the very next day - it turned out equally good with no compromise in taste and texture. It was super crispy on the outside, light, moist and airy on the inside. There was a right balance of tartness and sweetness from the apples, and the warm notes from Fall spices namely cinnamon, ginger and nutmeg. When I thanked my husband for the recipe, he told me he was inspired by Chef John, so thank you Chef!

Detailed recipe for Apple Fritters
EASY HOMEMADE APPLE FRITTERS
Ingredients
- 3 Apples
- 1 tablespoon Butter
- 1 tablespoon + ¼ cup Sugar
- 1 Egg
- 2 tablespoon Melted butter
- ½ teaspoon Cinnamon powder
- ½ teaspoon Ground ginger powder
- ½ teaspoon Salt
- 2 teaspoon Baking powder
- ¼ teaspoon Grated nutmeg
- 2 tablespoon Apple butter (check tips)
- â…” cup Milk
- 1 â…“ cup All purpose flour
- Oil for frying
For Glaze
- ½ cup Confectioners sugar
- 1 tablespoon Milk
Instructions
Step I
- Peel and chop the apples into small chunks.Heat 1 tablespoon butter in non-stick pan.
- Add chopped apples and saute it on medium flame till it develops golden color.
- Now add 1 tablespoon of sugar and continue sauteing it for another 6 to 8 minutes.
- Remove from heat and allow it to come to room temperature.
Step II
- Heat oil on a medium flame in a heavy bottomed pan for frying while preparing the batter. In a bowl, add ¼ cup sugar, egg, melted butter, cinnamon powder, ground ginger powder, salt, baking powder, nutmeg, apple butter, milk. Beat it nicely till everything comes together.
- To this add the cooked apple and flour and mix till they are evenly distributed. Do not over mix. The consistency of the batter will be similar to any cake batter – not too dry and not too runny – but in betweeen.
Step III
- Once the oil is hot, drop 1 or 2 heaped tablespoon of batter and fry till they are golden brown on both the sides.
- Fry in smaller batches so that they are not over crowded and are cooked evenly
- Transfer it to paper towel to absorb any excess oil. Let this cool for about 10 minutes.
- Meanwhile prepare the glaze : in a bowl, add confectioner’s sugar and milk and whisk it so that there are no lumps. Drizzle this glaze on each fritter.
- Apple Fritters are now ready. Serve and enjoy.
Notes
- apple butter gives you additional flavor. If you find it difficult to make your own apple butter simple skip it in the recipe. It will still taste good!
- You can also coat with cinnamon sugar or just sprinkle powdered sugar instead of glaze if desired.
- Do not overcrowd the pan. Depending on the size of the pan, adjust the number and size of the fritters.
- See that the oil is not too hot or too cold (should be between 330 to 365 F). If its too hot then the fritters will turn dark brown very quickly and will not be cooked inside, and if its too cold it will absorb excess oil.
- To check if the oil is hot, just drop a little piece of the batter mix and check if it sizzles and comes up.
