Ingredients for Chicken Hot WIngs | Nashville Hot Chicken
For the Nashville Spice Mix (yields 1 cup)
3 tablespoon Cayenne powder or Red chile powder
½ cup Paprika or Kashmiri Red chile powder
2 tablespoon Garlic powder
1 tablespoon Onion powder
1 teaspoon Cumin powder
1 tablespoon Salt
For the Marination
250 ml Yogurt or (thick) Buttermilk
⅓ cup of Nashville spice mix from above
1 kg Chicken wings (3 pounds)
Dredging Chicken
⅓ cup of Nashville spice mix
⅔ cups All-purpose flour / Maida
1 tablespoon Salt
Nashville Hot Sauce or Hot oil
2 tablespoon Butter
¼ cup Oil
⅓ cup of Nashville spice mix.
Other ingredients
Oil for frying
Creamy Dip
⅓ cup hung or thick Yogurt
⅓ cup Mayonnaise

How to make Nashville Hot Spice Mix?
In a bowl, add cayenne powder, paprika, garlic powder, onion powder, cumin powder, salt, and mix. Yields 1 cup of Nashville spice powder.
Divide this spice mix into 3 portions and keep it aside.
Making of chicken marinade
In a bowl, add buttermilk or yogurt along with ⅓ cup of Nashville spice powder and mix well. To this, add chicken wings and toss until combined.
Cover and refrigerate for 2 to 4 hours for best result.
Dredging chicken wings
Add flour, ⅓ cup of Nashville spice mix, and salt in a bowl and mix well.
To this, add marinated chicken wings one at a time and dredge them nicely in the flour so that they are coated well. Keep it aside for 2 to 3 minutes so that the flour adheres well to the chicken wings.
Making of Crispy & Crunchy Fried Nashville Hot Chicken
Heat oil in a pan on a medium flame for frying.
Once the oil is hot, add 5 to 6 chicken wings depending on the size of the pan and cook on medium to medium-high flame for 10 minutes or until the skin becomes deep golden in color and crispy on the outside. Flip halfway through the frying process, around 4 or 5-minute mark. Check out the video here.
Transfer to a paper towel to absorb any excess oil, and then place them over wire racks to keep the wings crispy for a longer time.
Making of Nashville Hot Sauce or spicy oil
Melt butter in a pan. To this, add oil and the remaining ⅓ cup of Nashville spice mix. Stir well.
Drizzle this hot sauce on top of each fried wing, and you are done.
