Ingredients
Chicken thighs: Bone in or Boneless pieces, cut into smaller portions
Spices: Basic kitchen spices like cumin seeds, turmeric powder, red chile powder, garam masala powder.
Tomatoes: Fresh sliced tomatoes for an authentic taste.

Step-by-step instructions
- Heat oil in a pan on a medium flame. Add cumin seeds and saute until fragrant.
- Add chicken thighs, turmeric powder, and red chile powder, and fry for 5 to 6 minutes. Remove from the pan and set aside.
- Add onions to the same pan and saute for about 5 minutes.
- Add garlic cloves and ginger chopped and saute for 3 to 4 minutes.
- Add the fried chicken, green chilies, and cilantro and mix well.
- Cover and cook this for 5 minutes.
- Add garam masala powder and salt, and mix.
- Now add tomato slices and mix well. Cover and cook for 8 to 10 minutes, stirring occasionally.
- Finally, add butter and mix. Garnish with more cilantro and ginger juliennes.

- To make the authentic, old-fashioned chicken karahi, skip the onions in the recipe.
- Any leftovers can be stored in the refrigerator in an airtight conatiner for 3-4 days.
