    If you want high-protein or meal-prep bowls for lunch or dinner, this recipe is perfect. It's nutritious and highly customizable—simply add your favorite veggies, sauce, or toppings.

    I really don’t follow a standard recipe when making these protein-rich bowls for lunch or dinner. Below are just ideas and alternatives you can use while making the chicken quinoa bowl. In other words, a build-on recipe for tangdi kebab and mexican cilantro lime quinoa.

    Ingredients

    Quinoa: Use plain, cilantro-lime, or vegetable quinoa. 3 cups cooked.

    I used tandoori grilled chicken, but oven-baked thighs or breasts work as well.

    Vegetables: 1 cucumber (sliced), 1 carrot (sliced), 1 onion (sliced and soaked in vinegar), or Greek salad.

    • Cook cilantro-lime quinoa until fluffy as directed.
    • Use tandoori grilled chicken, or substitute with oven-baked thighs or breasts.
    • Combine carrots, cucumber, and onions. Optional: drizzle with lemon juice.
    • In a serving bowl, add quinoa, grilled chicken, and mixed vegetables. Garnish it with cilantro.
