Vrat Wale Dahi Aloo is a super easy to make and delicious recipe prepared using simple ingredients like potato and yogurt (curd) in less than 20 minutes.

Dahi wale aloo is a healthy Indian recipe prepared mainly during Navratri, Ekadashi fasting, upvas, or vrat days using basic ingredients from your kitchen.
The best part about this dish is that it does not use onion, garlic, or tomatoes, yet it tastes finger-licking good.
This dish is vegetarian and gluten-free. You can make it vegan by substituting curd with vegan yogurt.
Ingredients
600 grams Potatoes
1 tablespoon Oil
1 teaspoon Cumin seeds
2 cups Yogurt or Dahi
2 to 3 Green chilies, finely chopped
Salt or Rock Salt or Sendha Namak, to taste
½ teaspoon Roasted Coriander Powder (Can use curry powder or garam masala powder, or chaat masala)
1 tablespoon Coriander leaves
How to make Vrat Ke Dahi Wale Aloo
Boil the Aloo or Potatoes
Peel off the potato skin and cut them into cubes. Then cook the potatoes using your preferred method (stovetop, pressure cooker, instant pot, or microwave).
I like to cook the potatoes in the microwave for 4 minutes.
Making of Dahi Aloo
Heat oil in a pan on medium flame, add cumin seeds and saute for a few seconds.
Add the boiled potatoes and ½ teaspoon salt, and saute it for 3 to 4 minutes until it becomes light in color. Now slightly mash a few potatoes and switch off the flame.
In another bowl, add fresh yogurt or dahi and nicely whisk until it is smooth. To this, add green chilies, ¼ teaspoon salt, coriander powder, and coriander leaves, and mix.
Now add the cooked potatoes and mix until everything is combined.
Garnish it with more coriander leaves and coriander powder if desired.
Pro Tips
Use fresh yogurt or curd for the best taste. I have not added water, but if yogurt is too thick, then you can add up to ½ cup of water.
Adjust the number of green chilies depending on your heat/spice tolerance.
Mashing the potatoes is entirely optional. Do it only if you want something like mashed potato salad.
You can also garnish this with Khara boondi or sev if desired.
Storage
Vrat Wale Dahi Aloo tastes best when prepared and served fresh. Any leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
Serving Suggestions
Dahi Wale Aloo can be served as a side dish with any vegetarian meal, along with steamed rice, ghee rice, or Indian bread like roti or chapati.
On fasting days, you can serve with kuttu ki poori, kuttu paratha, sama ke chawal, rajgira paratha, etc.

FAQ
Actually, any variety of potatoes, from Russet to Yukon gold or baby potatoes, works well with the recipe.
This step is optional. It is mainly done to crisp up the exterior. You can skip this step and simply add boiled and slightly mashed potatoes while adding to the yogurt.
If you are preparing this on regular days, you can add spices like garam masala powder, chaat masala, or hing (asafoetida).
If desired, add tomatoes and roasted garlic cloves to make it slightly different.
