    Eggless Dates Cake is a super delicious, soft and moist cake that is a perfect accompaniment for your tea or coffee.

    The nutty flavor of dates combined with almonds, raisins and cashews takes it to the next level. Date and nut cake or date and walnut coffee cake is one of the popular recipe in Asian countries specially during holidays like Christmas and Easter.

    I prepare this cake often as it is one of the easiest cake to bake. If you want to learn baking, this is the best cake that you can try out.

    You can also make this vegan and bake into 2 date loaf cake. The color of the cake may vary from what you see here depending on the dates that you have used. But that's ok because the taste of the cake is going to be just awesome.

    Serves : one 9 inch cake

    Ingredients for Eggless Dates Cake or Vegan Date Cake

    Dates - 8 oz
    Milk - 1 ½ cup (Use non dairy milk for vegan version)
    All purpose flour or Maida - 1 ½ cup
    Salt - ¼ tsp
    Baking soda - 1 ½ tsp
    Sugar - 1 cup
    Melted butter - 4 tablespoon (use coconut oil for vegan version)
    Almonds chopped - 1 tbsp
    Cashews chopped - 1 tbsp
    Raisins - 1 tbsp

    Steps to prepare Eggless Dates Cake or Vegan Date Cake
    • Preheat the oven for 350 degree F. Grease the baking pan with butter or line with parchment paper and keep it ready.
    • Grind dates and milk together to form smooth thick paste.
    • Transfer this to bowl. Add melted butter and mix.
    • Next add the dry ingredients - all purpose flour, salt, sugar, baking soda and mix until combined. Do not overmix.
    • Now add the chopped almonds, cashews and raisins and mix until combined.
    • Pour the batter into the baking pan and bake for about 30 to 40 minutes or till knife inserted comes out clean. Baking time varies depending on the oven, pan you bake and thickness of the cake.
    • Let the cake sit for atleast 5 to 10 minutes. Run knife to loosen the edges. Transfer it to cooling rack. Let it cool down completely even before you slice it.
    • Eggless Dates cake is now ready. Serve and enjoy.

    Tips to make the best date cake or date loaf:

    • I have used whole milk. You can use any non-diary milk, 2% or skim milk too.
    • Seedless dates are used in this recipe. You can also reduce the amount of sugar depending on the sweetness of the dates. The color of the cake may vary from what you see here depending on the dates that you have used.
    • Use any pan of your desired shape and size. The thickness and baking time may vary accordingly.
    • You can top the cake with more nuts or frosting of your choice.
    • If you are diet conscious then reduce the amount of butter in the recipe. You can also substitute butter with oil.
    • I love the crunchiness that nuts give to the recipe. You can add or skip almonds, cashews and raisins as per your taste.
