    Easy Carrot Bread (Moist & Flavorful)

    Carrot Bread is crispy on the outside and has a moist, soft, and chewy texture on the inside. This quick bread is easy to make and requires a few basic ingredients. I have prepared this carrot loaf using gluten-free bread flour. This is one of the best healthy bread recipes I have tried. Indeed a great way to increase vegetable intake in your diet.

    This bread can be served for lunch/dinner/breakfast. My family, especially my kids, loves this bread so much that I prepare it often at our house. They devour this bread whenever I add a slice of it to their snack box or lunchbox.

    Personally, I love the sweetness of the carrot and the texture of the bread. It is so versatile that it can be served for breakfast, as a mid-day or evening snack, or as an after-meal dessert. When carrots are not in season, I substitute carrots with grated zucchini or apple. Do try out this carrot bread recipe and let me know how it turned out.

    Ingredients for Gluten-Free Carrot Bread

    All-purpose flour is one of the main ingredients in this recipe. I have used Bob's Red Mill Gluten Free Flour. Feel free to use regular all-purpose (AP) flour or bread flour. AP flour can be substituted completely (or by half) with whole wheat flour.

    Grated Carrot is added for its flavor, texture, and color.

    Sugar is added for sweetness, and Salt is used to balance the flavors.

    Eggs are added to give this bread its structure. Egg substitutes can be used for a vegan version of this bread.

    Baking Soda is used as the leavening agent.

    Oil and Milk help in making the bread rich in flavor and keep them moist. Oil can be substituted with melted butter to make the bread more rich and give it a nutty flavor. For the vegan version use water instead of milk.

    Cinnamon powder gives the bread a warm earthy note - perfect for the Fall season. You can use pumpkin pie spice powder instead of cinnamon powder.

    Optional Ingredients - raisins and toasted nuts. Mashed bananas, dates, or grated apples can also be added.

    Step by Step Recipe

    1. Mix all the dry ingredients together.
    2. In a separate bowl, combine all the wet ingredients together. Add grated carrot and mix well.
    3. Fold the dry and wet mixtures together until just combined. Do not overmix. Add any optional mixins, such as toasted nuts and raisins.
    4. Bake in a preheated oven until a toothpick inserted at the center comes out clean. Cool the bread completely on a wire rack before slicing.

    Expert Chef Tips

    • Substitute sugar with brown sugar. The color of the bread will change accordingly.
    • Use parchment paper to line the bread loaf pan for easy removal and cleanup.
    • Use fresh baking soda for a good leavening effect.
    • Let the bread cool completely before slicing.

    Storage and Make-ahead Instructions

    • Storage Instructions: The bread can be stored in an airtight container at room temperature for up to 3 days and in the refrigerator for up to 10 days. Therefore, this carrot bread can be made beforehand, especially during the Holidays!
    • Freezer Instructions: Cover the bread with cling film, wrap it in aluminum foil, and store it in the freezer for up to 3 months. Thaw for 4 to 6 hours at room temperature or up to 24 hours in the refrigerator before serving.

    FAQs

    Can I make vegan carrot bread?

    Yes. Use egg substitutes such as mashed bananas, unsweetened applesauce, flaxseed egg, etc. Replace milk with dairy-free milk or water.

    Can I make sugar-free carrot bread?

    Yes. If your goal is to replace regular sugar with other natural sugar sources, then blend together a cup of Medjool dates and a cup of unsweetened apple sauce (or a large ripened banana) and use this as the replacement.

    Ingredients
      

    • 2 cups Carrot grated (2 large carrots)

    Dry Ingredients

    • 2 cups All Purpose Flour (I have used gluten-free flour)
    • 1 teaspoon Salt
    • 2 teaspoon Cinnamon powder
    • 1.5 teaspoon Baking soda
    • 1 cup Sugar

    Wet Ingredients

    • 2 large Eggs
    • ¾ cup Oil (neutral flavored)
    • ¼ cup Milk
    • 1.5 teaspoon Vanilla extract

    Instructions
     

    • Preheat the oven to 350 ℉ (180 ℃). Line a 9-inch by 5-inch bread loaf pan with parchment paper.
    • In a medium bowl, mix all the dry ingredients together and set aside.
      2 cups All Purpose Flour, 1 teaspoon Salt, 2 teaspoon Cinnamon powder, 1.5 teaspoon Baking soda, 1 cup Sugar
    • In a large bowl, whisk together eggs, oil, milk, and vanilla extract. Add grated carrots and mix well.
      2 large Eggs, ¾ cup Oil, ¼ cup Milk, 1.5 teaspoon Vanilla extract, 2 cups Carrot
    • Add the dry ingredient mixture to the wet mixture and fold until just combined. Do not overmix. The carrot cake batter is ready.
    • Pour the cake batter into the prepared bread loaf pan and bake for 50 to 55 minutes or until a toothpick inserted at the center of the loaf comes out clean.
    • Remove the cake from the loaf pan after 15 minutes and transfer it to a wire rack to cool completely. Delicious Homemade Carrot Bread is ready. Slice, Serve, and Enjoy!!
