Homemade Garlic Cheese Bread is simple yet so delicious, cheesy and garlicky pull-apart bread or crack bread recipe that you will ever make. This bread can be served on its own or as an accompaniment with pasta, soup, or salad.
Who does not love cheesy garlic bread?
The perfect soft and fluffy bread made from scratch, smeared with the right amount of garlic butter and loaded with mozzarella cheese all over makes it irresistible.
Garlic cheese bread is comfort food for my family, especially my boys. We are crazy pizza, pasta, and cheese bread lovers here. Whenever I start activating yeast for the dough, my son asks me if I am making pizza or garlic bread today. He loves it so much, and then after eating, he never fails to give me double thumbs-up, especially for foods like this. That doesn't mean he hates other foods. My kids eat healthy foods too 🙂
Now some people may hate me for this because the garlic bread is loaded with a good amount of cheese and butter. But believe me, it is always good to treat yourself and your family and spend good quality time together. Food is something that unites everyone and keeps you happy. Maintaining a balance between healthy food & regular exercise, and occasional indulgences like a pizza or a scoop of ice cream is vital. Agree?
For a quick & easy garlic cheese bread
We don't like or prefer store-bought readymade dough. So I always end up making it from scratch. But if you are busy working mom or want something quick, use store-bought pizza dough or sourdough bread or baguette.
I have used 2 tablespoon of butter for the garlic butter sauce, but if you want it extra buttery, you may add another extra 2 tablespoon of butter. If you do not like scallions or spring onions, you can use fresh herbs or skip them and use any pizza seasoning. I have used both garlic powder and freshly minced garlic because we like the flavor it gives to this bread. If you are looking for a light to mild flavor, use only one of them, and I recommend using minced garlic in this case. Vary the amount of cheese to taste.
Ingredients for Homemade Garlic Cheese Bread or Garlic Mozzarella Bread
½ cup + 1 tablespoon warm Milk
1 tablespoon Sugar
2 ¼ teaspoon Active dry yeast (1 packet)
2 cups All-purpose flour (Maida)
¾ teaspoon Salt
3 tablespoon Butter, softened to room temperature
For the garlic sauce
2 tablespoon Butter, melted
1 teaspoon Garlic, minced
½ to 1 teaspoon Garlic powder
1 tablespoon Mayonnaise
1 to 2 tablespoon Green onion or spring onion, chopped
½ to ¾ cup Mozzarella cheese
How to make garlic cheese bread from scratch?
In a bowl, add warm milk and sugar, mix well. Sprinkle yeast and leave it undisturbed for 10 minutes.
Add flour, salt and knead it using hands till combined. Add butter and continue kneading for good 10 minutes till you get a soft and smooth dough. Kneading the dough well will give you soft and fluffy bread.
Cover and keep it aside for 1 hour or until doubled in size.
Transfer the dough to the working surface. Using your palm, press gently to form a circle or oval shape of 8-inch diameter and ¼ to ½ inch thick. Cover it and let it rest for 10 minutes - this is optional.
After 10 minutes, using a sharp knife, score the bread into a square or crisscross pattern. Leave ½ inch towards the edge. You can check the detailed video on the making of garlic cheese bread here.
In another bowl, add all the ingredients mentioned under garlic sauce and mix until combined. Smear this on top of the bread and then insert mozzarella cheese in between the creases.
Bake in 350 degrees F preheated oven for 15 to 20 minutes or until cheese has melted and becomes bubbly. If you want golden brown color on top, broil for 1 or 2 minutes. The baking time may vary for every single oven.
Remove garlic cheese bread from the oven and let it sit for another 5 minutes. Serve warm, not hot, to get the actual taste, flavor and enjoy your bread.

- For a crispier golden brown garlic bread, you can broil for extra 1 or 2 minutes. I have not done it here.
- This is a very versatile recipe. You can vary all the ingredients mentioned under garlic butter to taste, substitute spring onions with any herbs like parsley, or substitute mozzarella with any other melting cheese combination of your choice.
- Time to bake may vary depending on heat and how your oven functions, plus the size of the baking tray and thickness of the bread.
Can I use olive oil in the recipe?
Yes. You can skip the butter and substitute it with olive oil. The taste and flavor will vary accordingly.
Can I freeze garlic cheese bread?
Yes, you can. Just warm it up in the oven until heated through.
Air Fryer Cheese Garlic Bread
Preheat to 350 degrees F for 5 minutes. Bake for 8 to 10 minutes or until the cheese has melted and how crispy you want your bread to be. It will get brown faster in an air fryer, so keep a closer look at 8 minutes.
Convection mode Cheese Garlic Bread
If you have a convection oven, then bake in preheated 170 degrees C oven for 10 to 12 minutes.
