Mixed Vegetable Dal or Vegetable Curry or Lentil Curry is a healthy, nutritious, protein packed vegetarian or vegan recipe that is an great alternative to traditional dal. This dish can be prepared in less than 25 minutes and served with any breads like NAAN, ROTI, CHAPATI or rice items such as steamed rice, JEERA RICE or GHEE RICE  for lunch or dinner.Mixed Vegetable Dal, Vegetable Curry, Lentil Curry, Indian lentil or dal dish, one pot meal, instant pot lentil curry or dal, pressure cooker lentil, vegan and vegetarian vegetable and lentil curry, plant based protein diet recipes, #redlentil #yellowlentil #greenlentil #Moongdal #masoordal

When I really want to prepare something quick and healthy I either prepare dal or use canned beans like black beans, kidney beans or chickpeas to prepare coconut based konkani curries. I always love to make healthy variations in dal as my family loves it and today I have mixed 3 different types of dals or lentils and added vegetables that were available in my pantry to make it even more healthier.

This is very flexible recipe. You can add any dal combination and any vegetables of your choice and prepare this dish. The best way to consume protein and veggies in your diet 🙂

For those who are watching weight can ignore oil completely in the recipe and can have this even as a lentil vegetable soup.

You added raw vegetables into a cooked dal and said dal is ready. How would it taste good if veggies are raw.

Delicious! Enjoyed it with Jeera rice!
Did add some ghee to the tempering for some added flavour and used some curry powder as did not have the kitchen king masala!
