- 800 grams Chicken thighs 6 to 8 chicken thighs bone-in & skinless
- Juice of 1 lemon
- 1 ½ teaspoon Salt
- 1 ½ tablespoon of Ginger garlic paste
- 1 ½ teaspoon Red chile powder
- 1 tablespoon Cilantro or parsley freshly chopped
- 1 tablespoon Italian seasoning
- ¼ cup Brown sugar
- ¼ cup Oil I have used coconut oil.
Instructions
- Preheat the oven to 425 degrees F.
- Add the juice of lemon, salt, ginger garlic paste, red chile powder, Cilantro, Italian seasoning, and brown sugar, and whisk. Now add the chicken thighs to the same bowl and mix so that they are coated well on both sides.800 grams Chicken thighs, Juice of 1 lemon, 1 ½ teaspoon Salt, 1 ½ tablespoon of Ginger garlic paste, 1 ½ teaspoon Red chile powder, 1 tablespoon Cilantro or parsley, 1 tablespoon Italian seasoning, ¼ cup Brown sugar
- Arrange the chicken thighs on a single layer on cast-iron skillet or baking dish.
- Pour oil over the chicken thighs.¼ cup Oil
- Bake the thighs for about 25-30 minutes or until the internal temperature reaches 165 and the exterior turns crispier. You can baste around 15 minute mark if need.

You will bake the chicken thighs for 35 to 30 minutes at 400 degrees F. There is no need to rotate or flip. The temperature will ensure the thighs turn crispy yet remain juicy on the inside. The thighs are perfectly cooked when their internal temperature is about 165 degrees F. The higher the temperature, the crispier the chicken.
Baking at a higher temperature for less time is always better than baking at a lower temperature for a longer time.
Chicken thighs at a preferred temperature of about 425-450 degrees F (220° C - 230°C ) will require atleast 25 to 35 minutes of baking time. However, if the thighs are larger, the baking time varies accordingly, and bone in and skin on thighs will have to be cooked longer than boneless skinless thighs.
At 350° F (175°C) - 50 to 55 minutes
At 375°F (190° C) - 45 to 50 minutes
At 400°F (205° C) - 40 to 45 minutes
The most preferred temperature to cook chicken thighs is 220 degrees Celsius.
If you want a crispy exterior, leaving the chicken thighs uncovered is always best.
