    Garlic Roasted Potatoes | How to Make the Best Crispy Roast Potatoes

    Garlic roasted potatoes are crisp on the outside, fluffy and creamy on the inside, and super easy to prepare, making it a perfect side dish for any meal.

    This can also be served as finger food or appetizer for your next cocktail, mocktail, game night, Super Bowl, or football party.

    I had some fresh dill leaves today, and I have added this to my recipe to make garlic dill roasted potatoes. Feel free to add any fresh herbs (cilantro, parsley, oregano, rosemary, or thyme) or dried herbs and seasoning of your choice. The recipe below is really flexible and can be tailored to your family's preference. You learn how to cook crispy potato once and then try different seasonings every single time.

    You will find instructions to make the crispiest roasted potatoes in 4 ways - using an oven, air fryer, stovetop pan roast, and instant pot. Choose any method you like. I personally love oven-roasted potatoes, and I feel the best crispy roasted potatoes are obtained when cooked in a super hot oven.

    FAQ

    What kind of potatoes to use to make crispy potatoes every single time?

    You can actually use any variety of potatoes. My favorite ones are Yukon Gold, Idaho, and Russet. I have also tried preparing this recipe with red skin potatoes, baby potatoes, and sweet potatoes. Everything tastes delicious.

    Should I peel or not peel the potatoes while roasting?

    Peeling or not peeling is totally optional. I love them both ways, as the potatoes with skin-on give a different flavor than those without skin. It's a personal choice.

    How to serve roasted potatoes?

    I just like to eat the way it is. You can serve it with sour cream seasoned with herbs and spices or ranch or mayonnaise as an appetizer or finger food. These roasted potatoes can be served as a side dish with soup, salad, or any grilled meat of your choice.

    Can I parboil or boil potatoes in advance before roasting?

    Yes. You can boil the potatoes, season them with garlic, herbs, and oil, cover them in an airtight container and refrigerate it until you are ready to use.

    Can I store leftover roasted potatoes?

    Store any leftover roasted potatoes in an airtight container and keep them in the refrigerator for up to 4 days. You can reheat them in any preferred way (oven, stovetop, or microwave).

    Reheating instructions: To serve them, first, let the roasted potatoes thaw to room temperature. If using an oven, preheat to 350 degrees F, then place the potatoes for 15 to 20 mins. If you are using a microwave, reheat the roasted potatoes for 3 mins on a High power setting. For the stovetop method, place a pan on medium heat, drizzle ½ tablespoon of oil, add the thawed potatoes, cover and heat for 8 to 10 mins, and make sure to flip the potatoes midway through the heating process.

    Ingredients

    5 medium Potatoes
    2 tablespoon fresh Dill leaves, chopped (use any herb of your choice)
    4 tablespoon Olive oil or Coconut oil
    1 teaspoon Garlic powder
    5 Garlic cloves, roughly chopped
    1 teaspoon Salt

    How to make the best crispy roasted potatoes?

    • Nicely wash the potatoes. Peel them if desired, and cut them into cubes.
    • Now boil the potatoes in water till they are cooked and drain them. To speed up the process, you can even microwave the potatoes for 5 minutes. Boiling gives the extra crispy crust to the potatoes.
    • While the potatoes are boiling, in a bowl, add dill leaves, oil, garlic powder, garlic cloves, and salt to taste, and mix well.
    • Once the potatoes are boiled and drained, nicely toss them with the garlic-herb mixture and let this stand for 10 minutes so that the hot potatoes absorb the flavors from garlic, herb, and oil.

    4 ways to roast the potatoes

    Now roast the potatoes in an oven, pan, instant pot, or air fryer. It is totally your choice. I have shared how to roast the potatoes in all 4 ways below.

    Oven Roasted Garlic Herb Potatoes - Best way to make crispy potatoes every single time.

    • Preheat the oven to 425 degrees F. Line the baking sheet with parchment paper or use a nonstick baking pan. Use cooking spray to grease the surface if needed. Place this in the oven while preheating so that the pan gets extremely hot and the potatoes will not stick.
    • Add the potatoes in a single layer on the parchment paper-lined baking pan.
    • Bake this for 30 minutes or until crisp and golden brown turning halfway at 15 minutes mark so that both sides get that crispy golden brown texture.

    The good thing about making roasted potatoes in the oven is that you can bake them at any temperature. For the best result, that is, crispy potatoes with creamy texture inside, bake them at a higher temperature for a shorter duration. Hotter the oven, the crispier the texture. 

    Now suppose you are cooking multiple items in the oven at the same time, you can simply add these potatoes and roast at that same temperature but keep the potatoes in the hottest part of your oven. Just keep in mind that the baking time will vary accordingly.

    Air Fryer Crispy Roasted Garlic Herb Potatoes

    Spray the air fryer basket once at the beginning with any cooking spray of your choice. Place the boiled and seasoned potatoes in the air fryer basket and bake at 400 degrees F. Stir and cook until the exterior becomes crisp and golden brown, about 18 to 20 minutes. Toss them halfway through (around 10 min mark) and shake to ensure even cooking.

    Pan-roasted or Grilled Garlic Herb Potatoes

    This stovetop pan roast and grill method are for those who do not have an oven, instant pot, or air fryer.

    Grease pan with oil and place on the stovetop on medium flame. Once the pan or grill is hot, add the boiled or microwaved and seasoned potatoes in a single layer within the pan. Cover with a lid and cook on a medium flame for 8 minutes. Once it becomes golden brown, flip and cook on the other side for an additional 6 to 8 minutes. You may drizzle oil if needed. For the best result, cook this on medium to medium-low flame.

    Here the exact time may vary depending on the pan you use and the flame's intensity.

    Instant Pot Crispy Roasted Potatoes

    If you are an Instant Pot fan and love to do the entire recipe, from boiling to roasting the potatoes on your instant pot, then read this section.

    • Add 1 cup of water along with the chopped potatoes to your instant pot.
    • Secure the lid and pressure cook on High for 12 to 13 minutes and quick release.
    • Drain the water and immediately toss pressure-cooked potatoes with the garlic herb mixture. Let this sit for 10 to 15 minutes. This will allow the potatoes to absorb the flavors.
    • Set the instant pot to Saute mode.
    • Drizzle 1 or 2 teaspoon of oil if needed. Once hot, add the seasoned and cooked potatoes and leave it undisturbed for 3 to 5 minutes. Once the bottom becomes golden brown, flip with a spoon or tongs and cook on the other side till it's browned and crisp. You may drizzle oil during this cooking process if needed.

    Tips to make the best roasted potatoes

    • If you are worried about fresh garlic burning at high temperatures, feel free to substitute it with garlic powder.
    • See that the pan is hot before adding potatoes. This will prevent the potatoes from sticking to each other.
    • For even cooking, make sure you leave space between potatoes.
    • Do not keep flipping the potatoes. When it is crisp and golden brown on one side, simply flip and cook the other side. Just once.
    • I have used coconut oil. You can use olive oil too.

    • Once the potatoes are boiled and drained, nicely toss them with the garlic-herb mixture and let this stand for 10 minutes so that the hot potatoes absorb the flavors from garlic, herb, and oil.

    Now roast the potatoes in oven, pan, instant pot or air fryer. Its totally your choice. I have shared how to roast the potatoes in all 4 ways below.

      OVEN ROASTED GARLIC HERB POTATOES – BEST WAY TO MAKE CRISPY POTATOES EVERY SINGLE TIME.

      • Preheat the oven to 425 degrees F. Line the baking sheet with parchment paper or use a nonstick baking pan. Use cooking spray to grease the surface if needed. Place this in the oven while preheating so that the pan gets extremely hot and potatoes will not stick.
      • Add the potatoes in a single layer in the preheated baking pan.
      • Bake this for 30 minutes or until crisp and golden brown turning halfway at 15 minutes so that both sides get that crispy golden brown texture.

      AIR FRYER CRISPY GARLIC HERB POTATOES

      • Spray the air fryer basket once at the beginning with any cooking spray of your choice.
      • Place the boiled and seasoned potatoes in the air fryer basket and bake at 400 degrees F. Stir and cook until the exterior becomes crisp and golden brown about 18 to 20 minutes. Toss them halfway through (around 10 min mark) and shake to ensure even cooking. 

      STOVETOP PAN ROASTED OR GRILLED GARLIC HERB POTATOES

      • Once it becomes golden brown, flip and cook on the other side for an additional 6 to 8 minutes. You may drizzle oil if needed. For the best result cook this on medium to medium-low flame.
      • Here the exact time may vary depending on the pan you use and the intensity of the flame.

      INSTANT POT CRISPY ROASTED POTATOES

      • Add 1 cup of water along with the chopped potatoes to your instant pot.
      • Secure the lid and pressure cook on HIGH for 12 to 13 minutes and quick release.
      • Drain the water and immediately toss pressure-cooked potatoes with the garlic herb mixture. Let this sit for 10 to 15 minutes. This will allow the potatoes to absorb the flavors.
      • Set the instant pot to SAUTE mode.
      • Drizzle 1 or 2 teaspoon of oil if needed. Once hot, add the seasoned and cooked potatoes and leave it undisturbed for 3 to 5 minutes. Once the bottom becomes golden brown, carefully flip using a spoon or tongs and cook on the other side till it’s browned and crisp. You may drizzle oil during this cooking process if needed.

      Notes

      • If you are worried about the fresh garlic burning at high temperatures feel free to substitute it with garlic powder.
