    Rasgulla Falooda is an exciting twist to the traditional rose-flavored falooda sev. There is always room for dessert, even after a heavy dinner. Why not make it interesting and the star of the show this Diwali?

    Rasgulla is a famous Bengali sweet, where soft and melt-in-mouth balls made of chenna (cottage cheese) are dipped in flavored sugar syrup.

    Falooda is an ice cream float, and popular street food across India prepared using flavored milk (rose, pistachio, mango), sabja seeds, jello, ice cream, and falooda sev (thin noodles).

    Last Diwali, I prepared another interesting sweet, i.e., soan papdi. It was memorable for all of us at home. This year I wanted to make one dessert that we would enjoy and remember for a long time, and I have chosen rasgulla falooda, where every spoon is like a pataka of flavors and very addictive at the same time.

    You can not only prepare this colorful dessert for Diwali but also for any special occasions or festivals like Holi, Raksha Bandhan, etc.

    Diwali Special Dessert Recipe - Ice cream float falooda and rasgulla (paneer desserts)

    Ingredients

    • 1 tablespoon Basil seeds (sabja seeds or tukmaria seeds)
    • 1 cup Water
    • Mango or Strawberry jello as needed
    • 50 grams Vermicelli Sev or Falooda Sev
    • 2 cups Mango milkshake ( 1 pack of mango milkshake powder mixed with 2 cups of chilled milk)
    • 2 scoops Pistachios or Vanilla ice cream
    • 4 Rasgulla (homemade or store-bought)
    • Tutti frutti for garnish
    • Nuts for garnish

    How to make Rasgulla Falooda?

    Prepare jelly using jello or jello crystals as per package instructions the previous night and refrigerate to set.

    Soak sabja seeds in 1 cup of water and let them rest for 30 minutes. It should form a jelly-like mixture.

    Cook the sev in boiling water until softened and drain excess water. Keep this aside. Follow the package instructions while cooking the sev.

    Mix 2 cups of chilled milk with milkshake powder in a bowl and whisk. Keep this aside. Alternatively, prepare a milkshake using fresh seasonal fruits (or flavoring agents like badam powder, rose syrup, etc.) and a couple of vanilla ice cream scoops.

    To arrange rasgulla falooda (arrange depending on the size of the serving glass)

    Add jelly, followed by 2 tablespoon of soaked sabja seeds. To this, add one rasgulla cut into halves and sugar syrup in which it is soaked. Check the video here on making of rasgolla falooda.

    Next, add the cooked sev as desired, mango milkshake, top it off with pistachios ice cream, followed by another rasgulla, and garnish with tutti frutti and nuts.

    Pro Tips and Substitutes

    To make my job easier, I have used store-bought Amul Rasgulla, which is available in all Indian stores, especially during Diwali. You can check my recipe here if you want to do rasgulla at home.

    Falooda Sev: To make falooda, thin noodles or sev called falooda sev are used. If it is unavailable, you can use thin vermicelli as I did in the recipe.

    Flavored milk: You can flavor your milk with rose syrup (Rooh Afza), mango essence or mango milkshake powder, pistachio essence or pistachio milkshake powder, badam milk powder, etc.

    Sabja seeds: This is the key ingredient while preparing falooda. Its texture in the falooda makes it irresistible. Sabja seeds are also known as basil seeds or tukmaria. You can use chia seeds or cooked sabudana (tapioca pearls) if sabja seeds are unavailable.

    Jelly: Any flavored jelly goes well with falooda. I prefer strawberry and mango. You can bring the jello or jelly crystal and make it the previous night as per package instructions and let it set in the refrigerator.

    Ice cream: To make this dessert colorful for Diwali, I have used green color pistachio ice cream. You can use Kesar or mango ice cream or basic vanilla ice cream in the recipe.

    Nuts: Use any toasted nuts of your choice.

    Fruits: If interested, you can add fruits like mango, apple, and grapes.

    Variations :

    You can make some more flavored falooda by simply substituting rasgulla with one of the below Indian sweets.

    Gulab Jamun Falooda

    Rasmalai Falooda

    Or any paneer or mawa-based sweet to make falooda.

    Chocolate Falooda: Use the chocolate syrup to make a milkshake which can then be used to prepare chocolate-flavored falooda

    Kesar Pista Falooda: Prepare a pistachio milkshake made using store-bought powder and flavor it with Kesar or saffron.

    FAQ

    How to make jelly for Falooda?

    I use jello or jelly crystal powders and follow the instructions on the packet to make jelly.
    To make your own jelly at home, in a bowl, add 2 cups of water, 1 teaspoon agar agar, and 4 tablespoon sugar, and whisk. Bring this to a boil. Pour and set in a bowl. You can set this in the refrigerator to speed up the process. You can also add colors of your choice.

    Which sev to use while making falooda?

    Use very thin sev made using corn flour or wheat flour vermicelli.
