    Coriander Masala Pav is a simple and easy snack recipe that brings the bold flavors of Mumbai street food with a refreshing twist. It is packed with coriander leaves, bhaji (spicy curry), and buttery pav (dinner rolls). One of the best recipes to try if you have leftover pav or pav bhaji masala.

    Coriander leaves: Also known as cilantro. Adds freshness and an interesting twist to the traditional recipe.

    Pav Bhaji Masala: You can use traditional pav bhaji curry or kali pav bhaji while making this pav.

    Pav: Dinner rolls (homemade or store-bought).

    Butter: For rich taste and flavor.

    Sev and Onions: For garnish and traditional street flavor.

    Preparation

    Freshly made coriander masala, pav bhaji curry and dinner rolls (pav).
    • Make the traditional pav bhaji or kali pav bhaji masala and keep it ready.
    • Heat 1 ½ tablespoon of butter in a pan. Add coriander leaves and sauté for 2 to 3 minutes, then switch off the flame.
    • Toast the pav or dinner rolls with the remaining 1 tablespoon butter. The more butter, the better the taste.

    Assemble

    • On one half of the pav, add pav bhaji masala, toasted coriander, onions, and sev. Smear some masala and sautéed coriander with sev and onions on top of the roll.
    • Serve and enjoy.

    • ¾ cup Coriander leaves chopped
    • 2 ½ tablespoon Butter plus more if needed
    • 6 Pav or Dinner rolls
    • ½ Onion large, chopped
    • Sev
    • Black Pav Bhaji or traditional pav bhaji

    Instructions
     

    Preparation for masala pav

    • Make the traditional pav bhaji or kali pav bhaji masala and keep it ready.
      Black Pav Bhaji
    • Heat 1 ½ tablespoon of butter in a pan. Add coriander leaves and sauté for 2 to 3 minutes, then switch off the flame.
      2 ½ tbsp Butter, ¾ cup Coriander leaves
    • Toast the pav or dinner rolls with the remaining 1 tablespoon butter. The more butter, the better the taste.

    To make masala pav

    • On one half of the pav, add pav bhaji masala, toasted coriander, onions, and sev. Smear some masala and sautéed coriander with sev and onions on top of the roll.
      ½ Onion, Sev
    • Serve and enjoy.
