Ingredients
Chicken: Bone in chicken thighs or drumsticks. Boneless can also be used.
For marination: turmeric, chile, garam masala powder, onion, ginger and garlic with fresh herbs like mint and cilantro.

Step-by-step instructions
- In a large bowl, add chicken, turmeric powder, chilli powder, garam masala powder, salt, coriander, mint, sliced onion, and ginger-garlic paste, and mix well.
- Let the chicken marinate for 15 minutes (minimum) to 30 minutes (preferred).
- Heat oil in a pan on medium-high heat. Add marinated chicken and fry for 5 minutes, leaving it undisturbed.
- After 5 mins, flip the chicken to the other side and continue to fry for another 5 mins.
- Now, reduce the heat to medium. Stir the chicken, cover, and cook for 5 minutes.
- Remove the lid, stir the chicken, cover it back, and cook for another 5 mins.
- Remove the lid, add butter, garnish with cilantro, and give it a final mix.
- Serve and enjoy.

- Instead of garam masala powder, curry powder or kitchen king masala can be used.
- Adjust the spices to taste.
- You can prepare this with bone-in or boneless chicken pieces.
