Lemon Roasted Potatoes | Herbed Potatoes

Ingredients
- 2.5 pounds Potatoes 1.25 kg approx
- 6 to 8 Fresh mint leaves or use any herb of your choice
For the lemon butter garlic herb sauce (Greek-flavored potatoes)
- 8 to 10 Garlic cloves
- ΒΌ cup Mint leaves
- ΒΌ cup Parsley or Coriander leaves
- ΒΌ cup Lemon juice
- ΒΌ cup Butter melted + 1 tbsp
- Salt to taste
- 1 to 2 teaspoon Italian seasoning optional
Instructions
Peel and boil potatoes
- Peel the potatoes, cut them into cubes, and add them to the salted boiling water along with fresh mint leaves (or herb of your choice).2.5 pounds Potatoes, 6 to 8 Fresh mint leaves
- Cook for 15 to 20 minutes or until tender.
- Drain and keep it aside.
Make the lemon garlic herb sauce
- To a mixie jar or blender, add garlic, mint, parsley, and lemon juice and grind it to a coarse paste.8 to 10 Garlic cloves, ΒΌ cup Mint leaves, ΒΌ cup Parsley or Coriander leaves, ΒΌ cup Lemon juice
- Add this to a large mixing bowl along with melted butter and give it a nice mix. (Potatoes are boiled in salted water, so adjust salt accordingly)ΒΌ cup Butter, Salt
- Add the boiled and drained potatoes and toss until combined.
Bake the crispy lemon potatoes
- Preheat the oven to 400 degrees F or 200 degrees C.
- Transfer this to a baking sheet or baking pan and spread on a single layer.
- Bake for 25 to 30 minutes, rotating halfway through. (I have sprinkled Italian seasoning while flipping, and it is optional)1 to 2 teaspoon Italian seasoning
- Serve it as an appetizer or side with Greek salad, roasted chicken, ham, turkey, beef, salmon, or shrimp, and enjoy.
