    Easy Thai Lemongrass Rice

    Thai Lemongrass rice is a quick and easy-to-make, so flavorful and delicious rice recipe that I could eat every day. This dish can be prepared in less than 20 minutes and under 500 calories per serving. The combined flavor of lemongrass, lemon zest, ginger, and garlic cloves gives an additional kick to this dish.

    I have used jasmine rice and served it with crispy potatoes. This combination tastes great. You can even use basmati rice or leftover rice for this recipe. This is also one of the best lunch-box recipes.

    Ingredients for Thai Lemongrass Rice

    • Rice- Jasmine rice is used for authentic Thai flavor. Any long-grain rice, such as Basmati rice, etc., can be used. Leftover rice can be used for a quick weeknight meal.
    • Lemongrass, Garlic cloves, Ginger, Lemon zest, and Onion add aroma to the rice.
    • Green chilies add spiciness to the dish. Traditionally, Thai Brid Eye chilies are used. Can be substituted with serrano peppers, jalapenos, etc.
    • Soya sauce and Worcestershire sauce add tanginess, sweetness, and an umami flavor to the dish. I have used vegan-certified sauces in my dish. Soy sauce can be substituted with fish sauce, and Worcestershire sauce can be replaced with Oyster sauce.
    • Butter adds a nutty flavor to the rice. It can be substituted by vegetable oil for a vegan version.
    • Coriander leaves and Green onions - for garnish. Use any herbs of your choice.

    Step-by-Step Recipe

    Step 1 - Cook the rice according to package instructions. If you are using leftover rice, then ignore this step.

    Step 2 - Heat oil in a pan on medium flame. Add finely chopped lemon grass and saute for a minute. Add remaining aromatics and green chilies and saute for 3 to 4 mins.

    Step 3 - Add soya sauce and Worcestershire sauce and mix well.

    Step 4 - Add the cooked rice and mix till it is well combined. Garnish it with coriander leaves and spring onions.

    Flavored rice with lemon grass is now ready to be enjoyed.

    Expert Tips

    1. Remove the outer portion and cut the stem of lemon grass and find the tender part. Finely chop the tender part and use it in the recipe.
    2. Vary the amount of green chilies as per your taste.
    3. You can serve this alone or along with any Thai entrees of your choice.

    Why is my rice mushy?

    To prevent mushy rice, use rice to water ratio of 1 cup: 1.5 cups while cooking. Optional step - Once the rice is cooked, spread it on a large plate and let it cook completely. This will help stop cooking and evaporate excess moisture. Leftover rice works perfectly for this recipe.

    How to cut lemongrass for this recipe?

    Ingredients
      

    • 1 cup Rice (3 cups cooked rice)
    • 1 tablespoon Butter use Oil for vegan version
    • 1 tablespoon Vegetable oil
    • 2 tablespoon Lemongrass finely chopped
    • 6 cloves Garlic finely chopped
    • 1 teaspoon Ginger grated
    • ¼ teaspoon Lemon zest
    • 1 medium Onion finely chopped
    • 2 pieces Green chilies finely chopped/slit
    • 1 teaspoon Soy sauce
    • 1 teaspoon Worcestershire sauce (use vegan-certified if need)
    • ½ teaspoon Salt adjust to taste
    • 1 tablespoon Cilantro for garnish
    • 1 tablespoon Spring onions for garnish

    Instructions
     

    Step 1

    • Cook the rice according to package instructions. I use 1 ½ cup of water for 1 cup of rice. Add salt and butter while cooking.
      1 cup Rice, ½ teaspoon Salt, 1 tablespoon Butter
    • Bring it to boil, cover with lid and simmer for 10 minutes. Leave it undisturbed.
    • If you are using leftover rice, then ignore Step 1.

    Step 2

    • Meanwhile, in mortar and pestle finely crush the garlic cloves and green chilies.
      6 cloves Garlic, 2 pieces Green chilies
    • Heat oil in a pan. Add finely chopped lemon grass and saute for a minute on low flame.
      2 tablespoon Lemongrass, 1 tablespoon Vegetable oil
    • Add onions, ginger, lemon zest, finely crushed garlic and green chilies, and saute till it becomes translucent. Add a pinch of salt if desired.
      1 teaspoon Ginger, 1 medium Onion, ¼ teaspoon Lemon zest
    • Add soya sauce and Worcestershire sauce and mix well.
      1 teaspoon Soy sauce, 1 teaspoon Worcestershire sauce

    Step 3

    • Add the cooked rice and mix it well combined with the sauteed ingredients.
    • Garnish it with cilantro/coriander leaves and spring onions.
      1 tablespoon Cilantro, 1 tablespoon Spring onions
    • Flavored Thai lemongrass fried rice is now ready. Serve hot with crispy potatoes and enjoy.

      I love lemongrass flavoured rice. This recipe is so cool . I make a similar rice but cook the rice with coconut milk....and lemongrass infused....
      Should try this method as well 🙂
