Nectar Plum Cake is a classic cake with soft and moist texture, served with caramelized fruit topping that is perfect for holidays, parties or anytime of the year. This cake is also popularly known as honey plum cake.
Today I have partnered with Truvia® to prepare this gorgeous cake using their Truvia® Nectar.
We love sweets and have late night sweet cravings regularly So I am always in search for sweet products with less calories. Recently during my visit to our local Target store I found this product Truvia® Nectar in bottles (100g and 300g). I immediately checked online about this and saw great reviews. I bought a small bottle and used it in my coffee as soon as I reached home, and again next morning with my bread and pancakes.
Unlike other sweeteners, Truvia® Nectar comes packed with sweetness, so a very little goes a long way. Their website contains useful conversion charts for substituting conventional sweeteners with Truvia® Nectar. Having tried this product several times, I can confidently say that these converted measurements have worked perfectly in all the recipes that I have tried so far. Well as you may have guessed, I quickly ran out of Truvia® Nectar in the small bottle, and ever since I have only bought big 300g bottles 🙂 .
Truvia® Nectar has 50% fewer calories per serving than sugar and adds a touch of sweetness wherever you would use agave, sugar or honey. Because Truvia® Nectar is a stevia-honey blend sweetener that is twice as sweet as honey, you only need to use half as much. Coming to this cake, I generally add at least ¾ cup of sugar and 4 tablespoon of honey, but this time I substituted them with Truvia® Nectar and I just ended up adding only ¼ cup and 2 tbsp. Isn't that amazing! I was very happy with the result. I also used Truvia® Nectar to blanch and lightly caramelize the plums that were used for topping the cake. The cake was perfectly moist, flavorful and the caramelized fruit topping will make every bite of this irresistible.
Generally cake recipes call for the addition of large amount of sugar, but now with Truvia® Nectar I can reduce the calories to half without compromising on sweetness or taste. Yeah! Thank you Truvia®. I also prepared a no-bake cheesecake using Truvia® Nectar. I will also soon share the recipe for the same. This product is definitely a keeper. Serves : one-10 inch cake
Ingredients for Nectar Plum Cake
Vegetable shortening / Dalda - ¾ cup
Baking soda - ½ tsp
Baking powder - 1 ½ tsp
Salt - 1 tsp
Truvia® Nectar - ¼ cup + 2 tablespoon (this can be substituted with ¾ cup of honey)
Egg - 2
Vanilla extract - 2 tsp
Whole milk - 1 cup
All purpose flour - 3 cups
For the topping :
Butter - 2 tbsp
Lemon juice - 1 tsp
Truvia® Nectar - ¼ cup + 1 tsp
Plums - 3
Pistachios roughly chopped - for garnish
Steps to prepare Nectar Plum Cake
Step I (Prepare the Cake)
- Preheat the oven to 350 degree F. Grease your 9 inch baking pan and keep this aside.
- In a large bowl, add shortening, baking soda, baking powder, salt, Truvia® Nectar, egg, vanilla extract and beat till it is light and fluffy.
- Now add whole milk, all purpose flour and mix till it is combined. Do not over mix.
- Pour the batter into greased baking pan.
- Bake for about 40 to 45 minutes or until toothpick or knife inserted comes out clean.
- Let this cool for about 10 minutes.
- Remove from the pan and place it on a wire rack so that it cools down completely.
Step II (Prepare the Topping and Assemble)
- Wash and chop the plums lengthwise.
- In a non-stick pan add butter, lemon juice, Truvia® Nectar and once it starts to bubble add the plums and cook for about 3 to 5 minutes till they are blanched and lightly caramelized and the juices are released from them.
- With a serrated knife slice about ⅛th inch top of the cake to get a flat top surface. Poke holes using a toothpick or a fork. Spoon plums and any juices on top of the cake.
- Nectar Plum Cake is now ready. Garnish it with pistachios. Serve and enjoy.
Tip:
- If you find it difficult to find fresh plums add in any fresh fruit of your choice. Some of my favorites include peaches, apples, pineapples, pears, and figs.
