This year, I have been super excited about celebrating festivals because of my little one. His way of having a good time and his enthusiasm for learning new things makes me want to celebrate all festivals in the most traditional way possible. Are you excited about the upcoming Navratri / Dussehra festival? How do you celebrate the Navratri festival?

I will be posting 9 different rice recipes from today so you can prepare it from day 1, offer to goddess Lakshmi and serve to your family and friends in the form of prasadam.
The key ingredients used to prepare this rice are saffron and ghee. By
There are many ways in which this dish is prepared. This is my way and I love to make it this way 🙂 The secret here is more the ghee better the taste 🙂 I love additional crunch in my dessert so I always add lots of dried fruits and nuts. Feel free to customize as per your taste.
Traditionally basmati rice is used to prepare this dish. But it tastes equally good with regular rice.
Soak the saffron strands in a tablespoon of water or milk. Roast the dry fruits that you are going to use with ghee and keep it aside. Cook the rice any way you are comfortable with. Once the rice is cooked using a fork, just spread it to separate the grains. Keep this aside. To enhance the flavor and if you like the aroma of cloves feel free to add 1 or 2 while cooking the rice.
In a pan, add ghee and rice and mix well. Next add the sugar, soaked saffron and saute it on medium-low flame for about 6 to 10 minutes or until ghee starts leaving sides of the pan. Check for the sweetness and add more if required. The correct ratio for rice and sugar is 1:1, but I like it a little less sweet so reduced it by 2 tablespoon so vary accordingly.
Add cardamom powder, roasted dry fruits and nuts, and mix well. Switch off the flame.
You are done!! It tastes so good that once you start eating you will finish it off in no time!!
