- 1 ½ cups Leftover chicken shredded or roughly chopped
- 1 Corn on the cob or frozen corn 1 cup
- 2 Tomatoes cubed
- ½ carrot chopped lengthwise
- 1 Cucumber seeds removed and diced
- 2 tablespoon Spring onions finely chopped
- 1 tablespoon Parsley or Cilantro finely chopped
- 1 ½ cups of Avocado cubed (2 to 3 avocado)
- 1 teaspoon Lemon zest
- ½ cup Crispy bacon or croutons
Chicken avocado salad dressing
- 3 tablespoon Oil olive oil or coconut oil
- 4 tablespoon Lemon juice
- ½ to ¾ teaspoon Salt
- ¾ teaspoon Black pepper powder adjust to taste
Instructions
Salad prep
- Heat leftover chicken in the pan for 3 to 4 minutes until heated through.1 ½ cups Leftover chicken
- Boil the corn on a cob or frozen corn in salted boiling water for 6 to 8 minutes. (Cob may take extra time than corn kernels)1 Corn on the cob
Make the dressing
- Add oil, lemon juice, salt, and pepper in a bowl and whisk until emulsified.3 tablespoon Oil, 4 tablespoon Lemon juice, ½ to ¾ teaspoon Salt, ¾ teaspoon Black pepper powder
- The simple dressing is ready. Keep this aside.

- In a bowl, add tomato, carrot, cucumber, corn kernels, spring onions, parsley, cooked chicken, avocado, and lemon zest.2 Tomatoes, ½ carrot, 1 Cucumber, 2 tablespoon Spring onions, 1 tablespoon Parsley or Cilantro, 1 ½ cups of Avocado, 1 teaspoon Lemon zest
