    Equipment

    • Pan

    Ingredients
      

    • 9 oz Tofu paneer
    • 1 tablespoon Vegetable Oil
    • 1 teaspoon Cumin seeds
    • 1 Onion finely chopped
    • 2 Green chilies finely chopped
    • 1 inch Ginger grated
    • 3 Garlic cloves finely chopped
    • ½ Turmeric powder
    • 1 Tomato finely chopped
    • ½ Capsicum finely chopped
    • Salt to taste
    • ½ teaspoon Red chile powder
    • 1 teaspoon Lemon juice
    • ½ teaspoon Garam masala powder curry powder (optional)
    • ¼ cup Green peas frozen, optional

    Instructions
     

    Preparation

    • Based on how you like the texture, cut the tofu into small cubes like what we have done, or crumble it with a masher and keep it aside.
      9 oz Tofu

    Making of scrambled tofu

    • Heat oil in a non-stick pan. Add cumin seeds. When they start to splutter, add onion, green chilies, ginger, and garlic, and saute until the onion turns translucent.
      1 tablespoon Vegetable Oil, 1 teaspoon Cumin seeds, 1 Onion, 2 Green chilies, 1 inch Ginger, 3 Garlic cloves
    • Add the turmeric powder, tomato, and salt and saute until tomatoes become soft.
      ½ Turmeric powder, 1 Tomato, Salt
    • Add the capsicum, red chile powder, garam masala powder, and green peas and mix well. Cook this for 2 to 3 minutes.
      ½ Capsicum, ½ teaspoon Red chile powder, ½ teaspoon Garam masala powder, ¼ cup Green peas
    • Add the tofu and lemon juice and mix well. Cook for 4 to 5 minutes until the tofu is heated through.
      1 teaspoon Lemon juice
    • Taste check and adjust the spices and salt.
    • Garnish with coriander leaves if needed.
    • Serve hot with avocado slices or any flatbread like Thai roti bread or avocado chapati, boiled or crispy potatoes, and enjoy.

    Notes

    • I have used extra firm tofu in my recipe. You can also scramble the tofu if you like.
    • Add veggies like kale, spinach, mushroom etc to this recipe. 
    • Adjust spices to taste.

    Simple tofu bhurji

    Scrambled recipes are called bhurji in India. Traditionally, paneer is used to make a vegetarian scrambled version. To make it vegan, I have used tofu today.

    The recipe for bhurji is very simple. All you need is onion, tomatoes, ginger, and garlic with spices like red chile powder, turmeric powder, and curry powder. Drizzle lemon juice and cilantro just before you serve.

    Serve this tofu bhurji with Thai roti bread for breakfast, light lunch, or dinner. You can also serve this for lunchbox with toasted pav or as an after-school snack recipe.

    Ingredients

    Tofu: Extra firm, firm, or silken tofu, anything will work. The texture will vary accordingly. You can even use paneer for a vegetarian version.

    Vegetables: Onion, tomatoes, capsicum, and green peas are used. Feel free to add kale or spinach.

    Spices: cumin, turmeric, red chile powder, and garam masala powder. Adjust to taste
