    Equipment

    • Pan

    Ingredients
      

    • ¾ cup All purpose flour
    • 2 Eggs
    • ¾ teaspoon Salt
    • ¼ teaspoon Black pepper powder
    • ½ cup Mayonnaise
    • 3 tablespoon Cilantro or Dill or Parsley
    • 3 tablespoon Spring onions
    • 1 cup Mozzarella shredded
    • 2 cups Leftover chicken shredded or cubed

    Other ingredients

    • 1 cup Bread crumbs or oatmeal flour for coating
    • Oil for pan frying

    Instructions
     

    • In a bowl, add flour, egg, salt, pepper, and mayo and whisk.
      ¾ cup All purpose flour, 2 Eggs, ¾ teaspoon Salt, ¼ teaspoon Black pepper powder, ½ cup Mayonnaise
    • To this, add cilantro, spring onions, Mozzarella, and chicken and mix until everything comes together. You can use this to make patties immediately or cover and store them in the refrigerator until ready to use.
      3 tablespoon Cilantro or Dill or Parsley, 3 tablespoon Spring onions, 1 cup Mozzarella, 2 cups Leftover chicken

    To make patties

    • Spread bread crumbs or oatmeal flour on a plate.
      1 cup Bread crumbs or oatmeal flour for coating
    • Take a small portion of the dough and form thick patties of ¾ to 1-inch thickness.
    • Dip both sides of the patties in the bread crumbs or oatmeal flour.

    How to cook chicken patties or chicken cutlets?

    • Grease a skillet or pan with oil and heat it on a medium flame.
      Oil for pan frying
    • Add 6 to 8 patties based on the size of the pan and drizzle oil. After 3 to 4 minutes, flip and cook on the other side for another 3 to 4 minutes. Cook until golden brown. Drizzle oil as needed.
    • Serve warm with ketchup, mayo, and some sauteed green beans, and enjoy.

    • You can make up to the batter or till shaping the patties and breading them. Store them in the refrigerator for up to 4 days.
    • Cooked chicken can be stored as per USDA for four days. So it all depends on how long you have stored the leftover chicken.
    • For Reheat: to enjoy that crispy crust, reheat any leftovers in the air fryer or pan fry with a drizzle of oil until crisp and warmed through. Microwave is not a good choice as it will soften the patties.

    Easy chicken cakes (chicken tikki)

    Chicken patties are great alternatives to the nuggets. Try our chicken patties if you have leftovers from Thanksgiving, Christmas, or family dinner. These are also known as cakes, rissoles, cutlets, tikki in India, and sometimes pan-fried croquettes. The patties are so tasty that you will not know they are made using leftover chicken.

    You can serve this as an evening snack, as an appetizer, or with some sauteed lemon garlic potatoes or green beans almondine for a complete meal.

    Ingredients or chicken cutlet (chicken patty)

    You will need leftover chicken or any cooked chicken, mozzarella cheese, batter with egg, flour, and spices, and herbs like parsley, cilantro, mint, or dill.

    Use bread crumbs or any crumbs of your choice for the crispy crust.

    Add egg, flour, mayo.

    Step 1: In a bowl, add flour, egg, salt, pepper, and mayo and whisk.

    Add leftover chicken or cooked chicken, herbs and cheese.

    Step 2: To this, add cilantro, spring onions, Mozzarella, and chicken and mix until everything comes together.

    Cutlet or patties batter is ready.

    Step 3: You can use this to make patties immediately or cover and store them in the refrigerator until ready to use.

    Shape and roll the patty or cutlet in bread crumbs.

    Can I bake the chicken patties instead of frying?

    Yes. Once the patties are made, place them in a baking sheet and bake at 350 degrees preheated oven for 20 minutes, flipping halfway through until golden brown.

    Can I freeze chicken patties?

    Both cooked and uncooked chicken patties can be frozen. If freezing uncooked ones, separate them with the parchment paper. Cooked patties can be stored in an airtight container in the freezer.
