Ingredients
- ¾ cup All purpose flour
- 2 Eggs
- ¾ teaspoon Salt
- ¼ teaspoon Black pepper powder
- ½ cup Mayonnaise
- 3 tablespoon Cilantro or Dill or Parsley
- 3 tablespoon Spring onions
- 1 cup Mozzarella shredded
- 2 cups Leftover chicken shredded or cubed
Other ingredients
- 1 cup Bread crumbs or oatmeal flour for coating
- Oil for pan frying
Instructions

- To this, add cilantro, spring onions, Mozzarella, and chicken and mix until everything comes together. To make patties
- Spread bread crumbs or oatmeal flour on a plate.1 cup Bread crumbs or oatmeal flour for coating
- Take a small portion of the dough and form thick patties of ¾ to 1-inch thickness.
- Dip both sides of the patties in the bread crumbs or oatmeal flour.
How to cook chicken patties or chicken cutlets?
- Grease a skillet or pan with oil and heat it on a medium flame.Oil for pan frying
- Add 6 to 8 patties based on the size of the pan and drizzle oil. After 3 to 4 minutes, flip and cook on the other side for another 3 to 4 minutes. Cook until golden brown. Drizzle oil as needed.
- Serve warm with ketchup, mayo, and some sauteed green beans, and enjoy.

- You can make up to the batter or till shaping the patties and breading them. Store them in the refrigerator for up to 4 days.
- Cooked chicken can be stored as per USDA for four days. So it all depends on how long you have stored the leftover chicken.
- For Reheat: to enjoy that crispy crust, reheat any leftovers in the air fryer or pan fry with a drizzle of oil until crisp and warmed through. Microwave is not a good choice as it will soften the patties.
