Whole Roasted Chicken with Herb Butter
Equipment
- Baking pan or roasting pan

Ingredients
- 4.4 pounds Whole chicken 2 kg
- 1 teaspoon Salt
- 1 teaspoon Pepper powder
- 1 bulb Garlic cut the head
- 1 Lemon
- 6 sprigs of Mint leaves
- 6 sprigs of Parsley or Cilantro
For the herb butter
- 8 tablespoon Butter less than 3 tablespoon actually gets used
- 2 tablespoon Mint leaves finely chopped
Instructions
- In a bowl, add softened butter and mint leaves and mix well. Keep this aside.8 tablespoon Butter, 2 tablespoon Mint leaves
- Place the whole chicken on your baking sheet or roasting pan. Pat dry the chicken and sprinkle salt and pepper powder on the outside and inside the cavity.4.4 pounds Whole chicken, 1 teaspoon Salt, 1 teaspoon Pepper powder
- Stuff the inside of the chicken with garlic head, squeeze the lemon juice, and also stuff these halves along with mint and parsley sprig.1 bulb Garlic, 1 Lemon, 6 sprigs of Mint leaves, 6 sprigs of Parsley or Cilantro
- Apply herbed butter all over the surface.
How long to roast a whole chicken?
- Bake the chicken in a preheated 400-degree oven for 60 to 90 minutes until the internal temperature of the thigh and breast reaches 165 degrees F. (The time to roast chicken will vary based on the bird size, so roast the chicken till the internal temperature reaches the safe 165 degrees F)
- Baste with the melted butter in the baking pan every 15 minutes.
- Let it rest for 15 minutes before slicing.

What to serve with whole roast chicken?

The deepest part of the thigh should be 165 degrees F when done. Start checking at the 45-minute mark. You can use an oven-safe thermometer or an instant thermometer.
