    Equipment

    • Skillet

    Ingredients

    • ¼ cup Wheat flour
    • ¼ cup Besan or All-purpose flour
    • ¼ cup Jowar flour white millet
    • ¼ cup Bajra flour black millet
    • ¼ cup Ragi or Soybean flour
    • Salt to taste
    • Vegetable oil for cooking breads

    Instructions

    Make the chapati dough

    • Add all the flours (wheat, besan, jowar, bajra, ragi) with salt and mix.
¼ cup Wheat flour, ¼ cup Besan or All-purpose flour, ¼ cup Jowar flour, ¼ cup Bajra flour, ¼ cup Ragi or Soybean flour, Salt
    • Now add warm water little by little and knead it for 3 – 4 minutes to form a soft and smooth dough like that of regular chapati.
    • You can immediately start preparing chapatis or rotis, but I generally prefer to cover the dough and rest it for 15 minutes.

How to cook mix flour chapati

    • Heat the tava or skillet on medium-high flame.
    • Dust the working surface with flour. Divide the dough into eight equal portions.
    • Take one portion and roll it to a 6-inch diameter circle like a tortilla or any other roti. (check tips)
    • Once the pan is hot, place the rolled bread and cook until the underside develops brown spots for about 30 seconds.
    • Then flip and cook on the other side for another 30 seconds. You can add oil or butter while cooking if desired.
      Vegetable oil
    • Repeat the process for the remaining dough.
    • Serve immediately and enjoy.

    Notes

    • If you find it difficult to roll on the working surface, then grease the parchment paper and roll or spread using your fingers. Lift the entire rolled chapati with the sheet, flip it on the pan, and peel the sheet. Ragi roti is done the same way. You can check the video on making ragi roti.
    • To make it flavorful, you can also add chopped onions, green chilies, coriander leaves, and cumin seeds while making the dough.
    • These roti or chapati taste the best when served fresh.
    • Check out our list of Indian gravy or curry that can be served with chapati (roti).

    Mixed flour chapati

Chapati, also called roti, is an unleavened flatbread popular and a staple in India and prepared with wheat flour, also known as atta. Today, we will be making next-level chapati using a combination of flours (multi-grain atta).

Here is a list of flours that you can add along with the traditional wheat or atta to make the chapati. I add all 1:1 ratio to get a soft chapati

I've made chapati at home but never used all these flours. I usually just use all ATA flour, which is why it doesn't look as good as yours and surely doesn't taste as good. I'll be using your recipe from now on. Thanks Kushi for posting this! 🙂
