    Roasted Sweet Potatoes

    Roasted Sweet Potatoes are super simple to make yet such a delicious and addictive side dish that is crispy on the outside, soft and delicate on the inside.

    Roasted Sweet Potatoes are so flavorful that it is hard to stop once you start eating this. These can be served as a side with chicken, pork, or even in your burrito bowls or tacos, or simply with steamed rice, and they just taste amazing. The sweetness from the sweet potatoes compliments so well with onion, garlic, jalapeno, fresh rosemary, butter, and oil. No additional spices or flavorings are required.

    I hadn't been a big fan of sweet potatoes when I was in India, but I just love them now. I did not know the recipes you can prepare with sweet potatoes were infinite till I visited restaurants here in the USA. As a kid, I only knew two sweet potatoes (kanang) recipes, i.e., Sweet Potato Fritters (Pakoras) - a perfect finger food for your next party and its use as an ingredient in a mixed vegetable gravy called Gajbaje.

    By the way, we had lots of fun with our friends this Thanksgiving. They just loved the recipes that I prepared and especially received a lot of compliments for Persimmon Apple Pudding. And we all went in groups for shopping, and I got a lot of items for my little one and my blog. How did you celebrate Thanksgiving??

    It's Hanukkah time, and last night we were at a Hanukkah dinner party at our friend's place, and I had a great time. I especially loved the Challah our hostess had prepared and, of course, potato latkes. Next up on the holiday list is Christmas, and I am super excited to attend a Christmas dinner party at my cousin's place. I told her that I would bring one or two dishes. And to be different from what I prepared for Thanksgiving, I decided to take a simple side dish prepared using Sweet Potatoes and take Carrot Halwa for dessert. What are your plans for Christmas this year?

    Ingredients for Roasted Sweet Potatoes

    Returning to roasted sweet potatoes, this is one of the simplest recipes I have done so far. The recipe calls for a few basic ingredients that you probably have in your pantry.

    • 3 Sweet Potatoes, cubed
    • 1 Red onion, diced
    • 1 bulb Garlic, crushed and peeled
    • 1 Jalapeno or Serrano, chopped
    • 1 tablespoon Rosemary, fresh & chopped
    • 3 tablespoon Melted butter (use coconut oil for vegan version)
    • 3 tablespoon Olive oil
    • ¼ teaspoon Salt to taste

    How to roast sweet potatoes?

    First, wash the sweet potatoes. Peeling or not peeling is your choice. I would say keep the skin on - at least partially, like the ones that I prepared above and then cut them into small bite-sized cubes. Small sweet potato cubes with some skin-on will give it a crispy texture.

    Dice the onion, crush the garlic cloves and peel them. Add jalapeno or serrano and de-seed them if you cannot handle the heat. Finally, add some roughly chopped fresh rosemary.

    Transfer all these ingredients to a big bowl, add butter, and olive oil. Next, sprinkle salt and toss till everything is combined. If you want a vegan version, you can skip the butter and add additional olive oil or coconut oil.

    Spread it in an even layer on a large baking pan and bake it in a 425 degrees F preheated oven for 25 minutes. Finally, broil for a minute or two or until golden brown.

    How to serve roasted sweet potatoes?

    These perfect oven-roasted sweet potatoes are an ideal accompaniment for almost all the main dishes on your Thanksgiving and Christmas menu. These can also be added as a filling for your burritos, tacos, salad or rice bowls, wraps, or as a topping on tostadas, etc.

    As sweet potatoes are sweet, they will contrast nicely with the spicy food of Indian, Thai, Korean, or Mexican cuisine.

    How to store leftover baked sweet potatoes?

    You can store leftover baked sweet potatoes in airtight containers or zip-lock bags for up to 7 days in the refrigerator. Before serving, reheat in the microwave for 2 to 3 minutes.

    What other flavors pair well with oven baked sweet potatoes?

    Spices such as cumin, fennel seeds, bay leaf, and cinnamon are some of my favorite additions when roasting sweet potatoes. Herbs such as rosemary, thyme, oregano, dill, and mint go well with sweet potatoes. I like to add light brown sugar, maple syrup, or honey as sweeteners. For a spicy or savory version, I prefer adding paprika, cayenne, or Indian red chili powder. You can even consider adding marshmallows, bacon bits, parmesan cheese, etc.

    What vegetables can be roasted in the oven?

    Cauliflower, Potatoes, Brussel Sprouts, Carrots, Broccolli, Asparagus, etc., are some other veggies that you can consider substitutes for sweet potatoes in the recipe.

    What are some dipping sauces that go well with roasted sweet potatoes?

    Mayonnaise, Garlic Aioli, Sriracha, gochujang, and ketchup are some dipping sauces that pair well with roasted sweet potatoes.

    Why are my sweet potatoes not completely cooked?

    Every batch of sweet potato is different in variety, freshness, moisture content, etc. Also, every oven is different. These factors, along with the cut's shape and thickness, determine the time it takes to cook sweet potato to perfection in the oven. When sweet potatoes are cut into small cubes, it should take about 25 mins to bake thoroughly at 425F. If sweet potatoes are cut into thick fingers or sticks, the baking time may increase by 5 to 8 mins.

    Spread the sweet potatoes evenly on the baking sheet for even roasting in the oven. You may also consider flipping them once midway through the baking process.

    Should we boil or microwave the sweet potatoes before roasting?

    I do not recommend boiling or microwaving sweet potatoes before roasting them in the oven.

    Boiling increases the moisture content in the sweet potatoes, resulting in soggy roasted sweet potatoes. On the other hand, if not appropriately microwaved, the sweet potatoes can lose moisture, resulting in chewy oven-roasted potatoes.

    How to prepare plain roasted sweet potatoes?

    Some people like sweet potatoes without overpowering flavors from spices and herbs. You can completely skip the herbs and spices given in the recipe below. If you prefer some heat, you can add a few cracks of black pepper.

    Instructions
     

    Step I

    • Preheat the oven to 425 degrees F.
    • Prep the sweet potatoes by roughly peeling off the skin. Chop them into bite-sized cubes.

    • In a large bowl, add sweet potatoes, cubed onion, garlic, jalapeno, rosemary, butter, olive oil, and salt, and toss till combined.
      1 Red onion, diced, 1 bulb Garlic, crushed and peeled, 1 Jalapeno or Serrano, chopped, 1 tablespoon Rosemary, fresh & chopped , 3 tablespoon Melted butter, 3 tablespoon Olive oil, ¼ teaspoon Salt to taste

    Step II

    • Spread this evenly in a single layer on a baking pan. Bake it in the preheated oven for 25 minutes. 
    • Broil on high for a minute or two or until golden brown. 
    • Roasted Sweet Potatoes are now ready. You can garnish with parsley and fresh rosemary and serve.

      I just had boiled sweet potatoes for lunch but these roasted sweet potatoes look sooo delicious. Will definitely try next time I have sweet potatoes.
