For soft caramel
- ¾ cup Sugar
- ¼ cup Water
- 2 tablespoon Salted butter
- ½ cup Heavy cream
- 1 teaspoon Vanilla extract optional
For chocolate coating
- 1 cup chocolate chips or compound, 200 g
Instructions
Making of caramel sauce or soft caramel
- In a small pan, add sugar and water, mix, and let it simmer. Leave it undisturbed until it turns golden brown.¾ cup Sugar, ¼ cup Water
- Add salted butter and mix. Once the butter melts, switch off the flame.2 tablespoon Salted butter
- To this, add heavy cream and mix well. Keep this aside. Let it cool to room temperature.½ cup Heavy cream, 1 teaspoon Vanilla extract
Melt the chocolate
- Using the double boiler method or microwave, melt the chocolate.1 cup chocolate
How to make chocolate caramel truffles?
- Partially fill the silicone molds with melted chocolate. Use a spoon to ensure the inside of the mold is coated with chocolate.
- Flip and remove excess chocolate from the mold. Refrigerate for 5 to 10 minutes for the chocolate to set.
- Fill the caramel sauce in a pastry bag.
- Fill the molds halfway through with the caramel.
- Fill the top with melted chocolate, level the top, and remove any excess.
- Keep this in the refrigerator for another 15 minutes.
- Unmold the chocolate. Serve and enjoy.

- You can keep the melted chocolate bowl in hot water so that it doesn't turn hard while you are filling the molds with caramel sauce.
- You can use molds of your favorite shape. We are giving these as Christmas gifts to our loved ones.
- If using unsalted butter, add a pinch of salt while making the caramel sauce.
- Store the truffle in an airtight container in the refrigerator for seven days.
- To prevent the sugar from crystalizing while making the caramel sauce, avoid stirring it until it turns light golden.

Salted caramel-filled chocolate truffles are always a crowd-pleaser. Homemade ones taste even better. You need only four ingredients to make this fancy dessert - sugar, butter, cream, and chocolate.
I have made these truffles festive-themed to give as gifts for the Christmas holidays. It is perfect for any special occasions like Valentine's Day, anniversaries, birthdays, etc.
The soft caramel or caramel sauce is first made and then filled in chocolate molds with the melted chocolate and chilled until set.
