    Vegan date apple bread

    Bake the best apple bread recipe this fall and during the holiday season. You can even give it as a homemade gift for Thanksgiving and Christmas holidays.

    The fresh, homemade diced apple sauce not only enhances the flavor but also makes it moist. The combined natural sweetness of the dates, apples, and coconut milk makes this bread a standout over any store-bought bread. I have added cashews, almonds, and raisins to the bread recipe, as I love the unique texture and crunchiness they provide to the bread and make it festive.

    This apple loaf cake can be served with hot coffee/tea/milk or as a after meal dessert.

    Ingredients

    Dates: Seedless dates are preferred. Adjust the sugar in the recipe based on the sweetness of the date.

    Apples: Fresh and firm apples are the best for baking. For best results you can even combine sweet and sour apple.

    Milk: For dairy-free versions, use coconut milk or almond milk. Else, regular whole milk can be used.

    Baking soda: Helps bread rise.

    Oil: Retains moisture and makes your bread fluffy.

    Sugar: Sweetener used.

    Nuts: Optional but gives a good crunch.

    Step-by-step instructions

    Cook the apples

    • Wash and peel the apples and finely chop them.
    • In a non-stick pan on medium flame, add the chopped apples and ½ cup of sugar, sprinkle some water, and cover to cook for about 10 to 15 minutes or until the apples are soft.

    Make the batter

    • Preheat the oven to 350 degrees F. Grease the baking pan of your choice: an 8 * 8-inch baking pan, one bread loaf pan, or two mini loaf pans.
    • Blend dates and coconut milk (almond milk ) in a blender to form a thick and smooth paste. Transfer this to a big bowl.
    • Add all-purpose flour, salt, baking soda, vegetable oil, and the remaining ½ cup of sugar to the same bowl and mix once.
    • Then, add chopped almonds, cashews, raisins, and the prepared apple sauce and mix until combined. Do not overmix.

    Bake the cake

    • Pour the batter onto a greased baking pan and bake for about 30 - 40 minutes or until a knife inserted into the bread comes out clean.
    • Let the bread rest for atleast 5 to 10 minutes before inverting it to a serving platter. Let it cool down completely before you slice it.
    • Serve and enjoy.

    Tips

    • The color of the bread may vary depending on the dates used.
    • You can substitute coconut milk with other dairy-free milk.
    • For the non-vegan version, you can substitute coconut milk with whole milk and vegetable oil with butter.
    • I used seedless dates in this recipe. Depending on the sweetness of the dates and apple, you can also reduce the amount of sugar.
    • You can use any baking pan of the desired shape. The baking time will vary accordingly.
    • You can even toast the nuts and add them to the recipe.

    Ingredients
      

    • 3 large Apples , medium sized
    • 1 cup Sugar , divided
    • 20 to 25 Dates , pitted
    • 1 ½ cups Coconut milk (check tips, any dairy-free milk or milk)
    • 1 ½ cups All purpose flour
    • 1 ½ teaspoon Baking soda
    • ¼ teaspoon Salt
    • 4 tablespoon Oil
    • 1 tablespoon Almonds ,chopped (optional)
    • 1 tablespoon Cashews , chopped (optional)
    • 1 tablespoon Raisins , optional

    Instructions

        Vidhya, I guess about 1/2 to 3/4 cup should be fine. You may have to adjust depending on the concentration and consistency of the puree. Let me know how it turns out!

      I have a query, in the ingredient column you had mentiond 'coconut milk' but in step 2 , you have mentioned 'almond milk'.
      Pls clarify this for me.

        Add around 3/4 cup of apple sauce and reduce coconut milk to 1 to 1 1/4 cup. Else your cake / bread may become soggy. Do let me know how this turned out.
