This is one of the most popular item from Indo-Chinese menu. Whenever we visit a Chinese restaurant in India apart from chilli chicken or Manchurian or spring rolls. we also order honey chilli potatoes. These delicious crispy potatoes are generally topped with sesame seeds, spring onions, and cilantro.

If you love sweet and spicy food, then this recipe is for you. It can be made easily at home. People of all age groups are going to love them.

This honey chilli sauce or honey sriracha sauce is very versatile.

You can use the same sauce recipe to prepare honey chilli mushroom or baby corn, honey sriracha cauliflower, honey sriracha shrimp or honey sriracha chicken, honey sriracha tofu or even honey chilli lotus stem... I can go on with a long list of variations of this recipe.

How to make potatoes crispy or crispy french fries?

First thing that affects the crispiness is the type of potatoes you are going to use for frying. It should be high in starch like Russet potatoes. Other potatoes with red skin, fingerling potatoes, etc. will make your fries soggy.

Next either coat your potatoes very lightly with corn flour, all purpose flour or rice flour and deep fry it once. Else go for double fry method. Want to know more on double fry method?

Drop me a comment below and I would be happy to create a separate post on it as I prepare french fries more frequently and turns out perfect every single time.

If you are using raw potatoes in this recipe - then I recommend lightly coating them in corn flour and deep frying them until golden brown and cooked through. If you want to save time you can also use frozen french fries to prepare this recipe - and I assure you that this will taste equally great.

What does soaking potatoes in water do? Should you soak potatoes in water before roasting or frying or baking ?

More starch is removed when the cut potatoes are soaked in water. This can be attributed to more surface area of the potato coming in contact with water. Removal of excess starch will not only crisp up the potatoes but also avoid it from developing dark brown color during the frying process.

Again it all depends on how much time you have on hand.  If you are in a rush, then just wash it and toss it with flour.
