Hasselback Potatoes are one of the easiest potato side dishes you can prepare for your loved ones during Thanksgiving or Christmas. The end result is garlicky baby potatoes or regular potatoes with crispy edges like french fries and a creamy mashed potato-like texture in the middle. I bet anyone can't stop after eating one.
Hasselback potatoes are by far one of the best side dishes to serve with your Thanksgiving turkey, Easter ham or pork, barbeques, casseroles, salads, etc. I can go on. When baked, the potato slices taste and feel similar to thick potato chips, except that these are still attached to the base of the potato.
Potatoes are something that I have loved in any form right from my childhood. There are numerous recipes to make with potatoes, but here are some of my readers' favorites:
How to make the best Baked Hasselback Potatoes?
I use a combination of butter and olive oil (or coconut oil) for richness and flavor. The first time you just brush the outside of the potatoes with melted butter and sprinkle some salt. Then, halfway through the baking process, you will have to brush the potatoes again with the remaining butter.
Basting the potatoes during the baking process is an important step. This will not only prevent your potatoes from drying out but give that crispy texture on the outside. When you brush the butter for the first time, the potatoes are too tight. But halfway through the baking process, the slices open up. I have added fresh herbs and garlic powder to the butter for additional flavors.
I also apply butter once the potatoes are fully baked for the extra oomph factor. This is the third application.
I sometimes even brush butter four times (once at the beginning, twice during baking, and a final application after baking) if I am working with larger potatoes that need a slightly longer cooking time.
Other Useful Tips
- You can skip salt when preparing herbed butter oil if using salted butter.
- In this recipe, you can use only butter or only oil or combine the two. The choice is yours.
- Instead of garlic powder, minced garlic can be used.
FAQs
The name Hasselback comes from the Swedish word Hasselbacken which is a restaurant in Stockholm where this dish was first served.
To be very honest, any potatoes from Russet, Yukon Gold to Red potatoes, anything works for this recipe. But to control the portion size and texture, I prefer baby potatoes or sometimes referred to as new potatoes.
Place two chopsticks or bamboo skewers on either side of the baby potatoes to prevent the knife from cutting through the potatoes.
Slice a very small portion on one side of the potato to form a flat base. Place the flat surface at the bottom. Use the chopstick as a guide and cut straight (at a right angle to the chopsticks) using a knife until it touches the chopstick into thin or thick slices, the way you prefer. Another option is to use a Hasselback Potato Slicer which is very convenient and easy to use. However, being a hands-on chef, I prefer the former approach of using chopsticks or bamboo skewers.
After slicing the potatoes, soak them in a bowl containing water and a teaspoon of vinegar or lemon juice for 30 minutes. This extra step helps remove extra starch from the potatoes.
After 30 mins of soaking, remove the potatoes and pat dry using a kitchen towel. Then let them air-dry for 5 mins. These, when baked, result in crispier Hasselback potatoes.
You can keep it in the oven at 350 degrees F for 10 minutes or until heated through.
1) You can top Hasselback Potatoes with cheese like mozzarella, cheddar, or parmesan.
2) To make herbed Hasselback Potatoes, just mix rosemary, chives, parsley, or any herb combination of your choice to the butter-oil mixture and brush.
3) You can make spicy Hasselback Potatoes by mixing paprika, cayenne, or chili flakes into the butter-oil mixture and brush.
4) For Indian-style Hasselback Potatoes, you can add tandoori masala or garam masala powder to the butter-oil mixture.
5) My other favorite toppings include finely chopped - bacon bits, pepperoni, mushroom, or sun-dried tomatoes.
Potatoes, like many other fruits and vegetables, turn brown when they come in contact with air by a process known as oxidation. After slicing the potatoes, add them to a bowl containing water with a teaspoon of lemon juice or vinegar.
Ingredients
24 Baby Potatoes (also known as New Potatoes or 6 to 8 large potatoes)
2 tablespoon Butter, melted
¾ teaspoon Salt (adjust to taste)

2 tablespoon Butter, melted
2 tablespoon Coconut oil or Olive oil
2 tablespoon Cilantro or Parsley, finely chopped
1 teaspoon Garlic powder
½ teaspoon Salt (adjust to taste)
Making of Hasselback Potatoes in an Oven
Cut the Hasselback Potatoes
- Nicely wash, drain and pat dry the potatoes.
- Cut one small portion of potato on one side to create a flat base. Place the flat surface at the bottom. Use the chopstick as a guide on two sides and cut straight until it touches the chopstick into thin or thick slices, the way you prefer.
- Preheat the oven to 425 degrees F. Line your baking pan with parchment paper and keep it aside.
Brush the potatoes with butter.
- Arrange the cut potatoes in a single layer in the baking pan. Brush each potato with melted butter and sprinkle some salt.
- Bake for a total of 30 to 40 minutes, depending on the size of the potatoes.
Prepare Garlic Herbed Butter Oil
- Add melted butter, oil, cilantro, garlic powder, salt, and mix in a pan.
- Halfway through the baking process (around the 15-minute mark), brush each potato with this garlic herbed butter oil and continue baking for another 15 to 20 minutes or until the edges are crispy and the inside is cooked and creamy.
- Once it comes out of the oven, brush again with remaining garlic herbed butter oil, serve and enjoy.
Hasselback potatoes in Air Fryer
- Preheat the Air Fryer to 350 degrees F.
- Place 6 to 10 baby potatoes brushed with plain butter and sprinkled with salt in the air fryer basket, and cook for about 10 minutes.
- Brush the potatoes again with herbed garlic butter, and cook in the air fryer for additional 5 mins.
- After a total of 15 minutes of cooking time, remove from the air fryer basket, and brush with herbed garlic butter.
- Repeat for remaining potatoes. Serve and Enjoy!

- After 10 minutes of cooking time, brush the potatoes with herbed garlic butter, and cook in the air fryer for additional 5 mins.

- Repeat for remaining potatoes. Serve and Enjoy!
