Indo Chinese Fried Rice or Vegetable Fried Rice or Veg Fried Rice is a quick and easy to make, flavorful rice recipe prepared using vegetables of your choice in less than 30 minutes.
This is vegan and gluten free. If you have leftover rice, this recipe is one of the best option as it can be prepared in less than 10 minutes.

Indo Chinese is one of my favorite cuisine and whenever we visit India, we make sure that we order Indo-Chinese delicacies at least once or twice during our stay. One item that is always fixed as the main dish is this vegetable fried rice along with other starters like SPRING ROLLS, CRISPY HONEY CHILLI POTATOES, GOBI CHILLI, SOYA MANCHURIAN.
How to make best, simple and easy fried rice at home for lunch and/or dinner?
I prefer using jasmine rice to prepare rice recipes as I love the aroma of this rice. You can even use basmati rice, or other long grain rice of your choice. To avoid breaking of the rice, do not over cook the rice and also allow it to cool down completely (very important) before you mix it with vegetables of your choice and sauce. Most people I know prefer to use a day old cooked rice or leftover rice for the recipe.
The rice should be non sticky and cooking fried rice from starting to end on high heat is what makes it the best and tastes very close to restaurant style. You can never replicate restaurant style rice at home because large woks and stoves with high heat gives smoky flavor which cannot be replicated at home.
I prepare this rice often with different vegetables available in my pantry. You can also add baby corn, paneer or tofu. Non-vegetarians can also add any meat (beef, bacon, chicken) of their choice, egg or even shrimp to this recipe.
The two main two ingredients that you should not miss while preparing Indo-Chinese fried rice recipe are green onions or spring onions or scallions and soy sauce. Addition of celery adds wonderful aroma and crunch.
Whenever I have leftover rice, I end up preparing this rice dish. You really don’t need any measurements. Vary the ingredients as per your taste. This is a no fuss recipe. My family even love to take this as a lunch-box dish.

Serves : 2 to 3
Ingredients for Indo Chinese Fried Rice or Vegetable Fried Rice or Veg Fried Rice
Raw rice - 1 cup
Olive oil or Vegetable oil -1 tbsp
Onions finely chopped / julienne - 1
Garlic cloves chopped- 3
Ginger grated - 1 tsp
Celery chopped - 1
Carrot finely chopped / julienne - 1
Capsicum finely chopped / julienne- 1
Green beans finely chopped / julienne - 5
Spring onions chopped - 3
Frozen green peas - ½ cup
Black pepper powder - ½ tsp
Vinegar - ½ tsp
Soy sauce - 2 tbsp
Salt - to taste
Steps to prepare Indo Chinese Fried Rice or Veggie Fried Rice
Step I
- Wash the rice and cook it according to the package instructions. Cook the rice al dente. Grains must be separated but fully cooked and not sticky or mushy. Use any rice of your choice. Basmati or jasmine rice tastes the best.
- Allow this rice to cool completely.
- If you are using left over rice or day old cooked rice, ignore the step I. 1 cup uncooked rice or 3 cups of cooked rice.
Step II
- Heat oil in a non-stick pan on high heat. Add onions, garlic, ginger and stir-fry them for 2 to 3 minutes.
- Add celery and continue stir frying for another 1 minute.
- Next add carrot, capsicum, green beans, spring onion, green peas and any other vegetables (broccoli, mushroom, baby corn, zucchini, cabbage or any other veggies of your choice) and stir fry for 2 to 3 minutes. The rawness should go but the veggies should still have that crunchiness. Do not overcook.
- Add black pepper powder, vinegar, soy sauce, salt to taste and stir for a minute. You can add any other spices or sauces of your choice at this point.
- Finally add in the cooked rice and toss till everything is combined. All this must happen in high flame for excellent results.
- Indo-Chinese Fried Rice or Veg Fried Rice or Vegetable Fried Rice is now ready. Serve hot and enjoy.
What is the best way to reheat fried rice?
The best way to reheat fried rice is by adding moisture (water or broth around 2 tbsp.) back to rice to avoid it from drying out. Once you add or srpirnkle water and toss, You can reheat on microwave safe bowl for 90 seconds or till heated through, stove top on medium flame or in the oven at 425 degree F for 15 minutes.

The rawness should go but the veggies should still have that crunchiness. Do not overcook.1 medium Carrot, 1 medium Bell pepper, 5 piece Green beans, 3 piece Spring onions, ½ cup Green peas
- Add black pepper powder, vinegar, soy sauce, salt to taste and stir for a minute. You can add any other spices or sauces of your choice and adjust to taste at this point.½ teaspoon Black pepper powder, ½ teaspoon Vinegar, 2 tablespoon Soy sauce, Salt
- Finally, add in the cooked rice (from Step 1) and toss till everything is combined. All this must happen in high flame for excellent results.
- Indo-Chinese Fried Rice or Veg Fried Rice or Vegetable Fried Rice is now ready. Serve hot and enjoy.
Notes
- Use any vegetables of your choice.
- Day-old leftover rice works best for this recipe
- If you are using freshly cooked rice, make sure to cool them to room temperature. I like to spread the cooked rice on large plates and place them under the fan for quick cooling.
