For potatoes in hot sauce sliders
- 6 Slider buns
- ½ cup Mayonnaise
- 2 teaspoon Sriracha sauce
- Potatoes in hot sauce
- Coleslaw
- 2 strands Cilantro leaves / Coriander leaves chopped
- 2 strands Spring onions chopped
- 3 Cabbage leaves
- 1 to 2 tablespoon Butter
For breaded eggplant cheese sliders
- 6 slider buns
- 6 Mozzarella cheese or Provolone Cheese slice
- Pan fried breaded eggplant
- Pasta sauce
- 2 strands Cilantro / Coriander leaves chopped
- 2 strands Spring onions chopped
- 3 Cabbage leaves
- 1 to 2 tablespoon Butter
Instructions
Potatoes in hot sauce sliders
- Split and toast the buns with some butter; mix mayonnaise and sriracha sauce in a small bowl.6 Slider buns, 2 teaspoon Sriracha sauce, 1 to 2 tablespoon Butter, ½ cup Mayonnaise
- Assemble the slider - spread sriracha mayo sauce on both halves of the buns, place the cabbage leaves, loaded potatoes, coleslaw, some coriander leaves, and spring onions on one side of the bun and then add the top bun and serve.Potatoes in hot sauce, Coleslaw, 2 strands Cilantro leaves / Coriander leaves, 2 strands Spring onions, 3 Cabbage leaves
Eggplant cheese sliders
- Split and toast the buns with some butter.6 slider buns, 1 to 2 tablespoon Butter
- Assemble the slider - spread the pasta sauce on both bun halves. On one half of the bun, place the cabbage leaves, stack a breaded eggplant, and top it with some flavored pasta sauce. Place another eggplant and top it with some more sauce and a slice of mozzarella cheese. Repeat the assembling process with all the buns and place them on the baking sheet.6 Mozzarella cheese or Provolone Cheese slice, Pan fried breaded eggplant, Pasta sauce, 2 strands Cilantro / Coriander leaves, 2 strands Spring onions, 3 Cabbage leaves
- Turn your broiler to high and broil these for a couple of minutes or until the cheese melts.
- Now top each one with the top half of the buns and serve.

- For potatoes in hot sauce slider - I have paired potato in hot sauce with crunchy coleslaw, and sriracha mayo pressed between pillow soft buns.

Ingredients
Slider buns: Use good quality slider buns of your choice. I use Pepperidge Farm potato slider buns and sweet and soft buns.
For potato in hot sauce slider: You will need loaded potato fries and mayonnaise, sriracha sauce, coleslaw, herbs, cabbage or lettuce leaves, and butter.
For breaded eggplant slider: Cheese like mozzarella or provolone, pan-fried breaded eggplant, herbs, cabbage leaves or lettuce, and butter.

Step-by-step instructions for party sliders
