    Easy quinoa salad recipe idea

    • 1 cup Quinoa
    • 1 cup Vegetables cucumber, tomatoes, avocado, corn, broccoli, peppers, etc
    • ½ to 1 cup Protein black bean, chickpeas, tofu, chicken, boiled eggs, etc
    • Cilantro or Coriander leavs or mint

    Quinoa salad dressing

    • 2 to 3 tablespoon Olive oil
    • 1 to 2 tablespoon Lemon juice
    • Salt and Pepper to taste

    Instructions
     

    • Rinse quinoa and cook with water until fluffy.
      1 cup Quinoa
    • Chop vegetables of your choice and herbs.
      1 cup Vegetables
    • Whisk the lemon olive oil dressing and keep it ready.
      2 to 3 tablespoon Olive oil, 1 to 2 tablespoon Lemon juice, Salt and Pepper
    • Combined all ingredients and toss with dressing.
      ½ to 1 cup Protein, Cilantro or Coriander leavs
    • Serve immediately or chill and enjoy.

    • For meal prep, store quinoa, veggies and dressing seperately. 
    • For a base ratio of 1 cup of quinoa, you can use 2-3 cups of your choice of mixins.
