This egg masala curry, also known as anda masala, is a very flexible recipe. Add only the spice powders and whole garam masala that are available in your pantry. The masala gravy's texture and body come from adding tomato ketchup and heavy cream.
This egg masala is best served with rice (steamed rice, jeers rice, ghee rice), naan, roti, chapati, dinner rolls, or even dosas like neer dose, appam, etc.

Ingredients
Eggs: Regular white eggs or brown eggs.
Onion and tomato: Basic key ingredients for any Indian curry, garlic, and chilies.
Tomato sauce: Adds sweetness and texture.

Boil the eggs
- Bring water to boil. Add eggs and simmer for 12-13 minutes for hard-boiled eggs.
- Cover and keep it for 10 minutes. Peel and slice into halves. Keep it aside.

- Heat oil in a pan on a medium flame. Add cumin seeds, cinnamon, cardamom, bay leaf, and curry leaves, and saute until aromatic.
- Add green chilies and garlic cloves and saute for a minute.
- Add onions and saute for 6 to 8 minutes or until light golden.
- Add tomatoes and cook for 5 minutes until the tomato becomes soft.
- Next, add salt, turmeric, chile powder, ketchup, and heavy cream.
- Add water for desired consistency and mix well.
- Add boiled eggs and coriander leaves, cover the pan, and simmer for 3 to 4 minutes.
- Serve this egg curry with naan, roti, chapati, and rice, and enjoy.
