Blueberry Galette or Blueberry Crostata is a simple and easy-to-make yet so impressive fancy dessert where the sweet and fresh blueberries are encased in perfectly crispy, flaky, and buttery homemade pie crust. This dessert recipe is popular during Summer and is ready in 40 minutes, and each serving is under 450 calories!
What is Galette or Crostata?
Galette is a word used in French cuisine, and similarly, Crostata in Italian cuisine means a flat round cake or rustic pastry with hand-folded edges. The best part that I love about the galettes is that once you have the pie dough or pie crust ready, you can fill it with almost anything, sweet or savory.
I recommend using in-season fruits to get the best results. Having said that, you are free to use frozen fruits too.
Some of my favorite sweet galettes are Strawberry Galette, peach galette, apple galette, mixed berries (strawberries, blueberries, raspberries) galette, blueberry pecan galette, blueberry peach galette, or galettes filled with rhubarb, figs, apricots, etc... Oh, I can go on. I am not naming these just like that. I have tried most of these. My family has a sweet tooth, you see 🙂
And when it comes to savory galettes, I love cherry tomato and cheese galettes, zucchini galettes, heirloom tomato galettes, etc.
Why Blueberry Galette?
Berries are one of my favorite fruits. They are pretty with a sweet and tart flavor combination, and above all, my son loves berries. These are packed with antioxidants, vitamin C, and vitamin K. I love to make pastry dough or pie crust from scratch. It is one of the easiest recipes to try when you start baking. But if you want a quick dessert, feel free to use store-bought pie crust or dough. There are tons of brands that sell excellent pie crusts. Use your favorite ones.

You don't need a pie pan to prepare this dessert. A flat baking surface such as a cookie sheet or pizza pan is sufficient. This dessert can be served as it is or with some vanilla ice cream or whipped cream.

Ingredients for Blueberry Galette or Crostata
For the pastry dough or pie crust
- All-purpose Flour - is the main ingredient in the pastry dough. We do not want to overmix the flour with water.
- Cold Butter cubes - Helps in making the dough rich, buttery, and flaky. I have used unsalted butter. Skip salt in the recipe if you are using salted butter.
- Salt - Helps in balancing the flavors. Skip salt if you are using salted butter.
- Sugar - Adds a hint of sweetness to the pie dough. Optional.
- Ice cold water - Helps prevent the dough from warming up, thus softening or melting the butter. If the butter softens, the pie crust will not be light and flaky when baked.
For the Galette filling
- Blueberries - use fresh or thawed frozen blueberries in the recipe. You can also use other berries or seasonal fruits if blueberries are not available.
- Corn starch - helps in thickening the filling as it bakes.
- Sugar - adjust to taste, depending on the sweetness of berries.
- Vanilla extract - adds fruity/floral flavors to the filling.
- A pinch of Salt balances the flavors and highlights the sweetness of the mixture.
- Zest of lemon or lime for a fresh citrus fragrance.
- Juice of lemon or lime for flavor. Use freshly squeezed or store-bought lemon juice.
Other Ingredients
- Egg for egg wash helps in giving the galette crust its signature golden brown color upon baking. For the eggless version, you can brush with cream or whole milk or water.
- Turbinado Sugar or Coarse Sugar to sprinkle on top gives a nice sweet crunch to the pie pastry crust.
- Ice cream for serving if desired.

Step by Step Recipe
Step 1 - Prepare the pastry dough or pie crust. If using store-bought pie crust, skip this step.
Step 2 - Prepare the filling. In a bowl, add blueberries, cornstarch, sugar, vanilla extract, salt, lemon zest, and lemon juice, and toss.
Step 3 - Assemble the galettes and bake. Roll out the pie pastry dough to about 1/16 to ⅛th inch thick. Carefully transfer this to a parchment-lined baking sheet. Add the blueberry filling (from Step 2) at the center of the rolled-out dough, leaving 1 inch on the edges so that it can be folded up to encase the filling. Gently fold the crust edges up in an overlapping fashion and pleat the dough.
Step 4 - Bake the galette. Brush the folded galette crust with egg wash and sprinkle it with sugar. Bake until the crust is golden brown and the fruit is bubbly.
Rustic Blueberry Galette is ready. Serve with a scoop of ice cream and enjoy.
Expert Tips to Make the Best & Easy Galettes at Home
- I have used just blueberries. You can make a mixed berries galette (such as strawberries, raspberries, blackberries, etc.), an almond galette, a frangipane galette, or a galette with a combination of fruits. Some best blueberry pairings are blueberry and peaches, blueberries and pecan, blueberry and nectarines, blueberries and plum, etc.
- The amount of filling you add to the dough can be varied as desired.
- Vary the amount of sugar to taste.
- For best results, use seasonal fruits. During the Summer season, use berries, mangoes, peaches, pineapples, etc., 🙂
- If you are making galettes in the fall season, nothing can beat the apple galette. Simply sauté chopped apples in cinnamon, sugar, and butter, and then use this as a filling.

Yes. Take the berries out from the freezer just before you assemble your filling or use thawed berries.
Leftover galettes can be stored at room temperature for 2 to 3 days, fridge for 3 to 5 days, or in the freezer for up to 1 month.
Yes. Simply make the pie crust dough vegan by substituting butter with vegan butter. All the other ingredients remain the same. Instead of egg wash, use dairy-free milk or water.
While mixing the filling, don't miss adding corn starch or flour, or tapioca. This is added so that the juices from the fruits are absorbed as the galette bakes and prevents the crust from having a soggy bottom.

Ingredients
For the pastry dough or pie crust (Feel free to use store bought pie crust)
- 1 ½ cups All purpose flour (Maida)
- ½ cup Butter , cold, cubed,1 stick (Use vegan butter for vegan version)
- ½ teaspoon Salt
- 2 teaspoon Sugar
- ¼ to ½ cup Ice cold water , divided (add as needed in 1 tablespoon increments)
For the Galette filling
- 3 cups Blueberries
- 2 tablespoon Cornstarch
- ⅓ cup Sugar (adjust to taste depending on sweetness of berries)
- 1 ½ teaspoon Vanilla extract
- ⅛ teaspoon Salt (a pinch)
- Zest of lime (½ lemon)
- Juice of ½ lemon (or lime)
Other Ingredients
- 1 large Egg , for egg wash (for eggless or vegan version you can brush with cream or milk or simply water)
- 3 tablespoon Sugar Turbinado Sugar or coarse Sugar to sprinkle on top
- Ice cream for serving if desired
Instructions
STEP 1 - Prepare The Pastry Dough Or Pie Crust. If Using Store Bought Pie Crust, Skip This Step
- In a large mixing bowl, add flour, salt, and sugar. Cut the butter into the flour mixture using a pastry cutter or fork until butter is well blended. Small speckles or pieces of butter combined with flour, sugar, and salt are what we are aiming for.1 ½ cups All purpose flour, ½ cup Butter, ½ teaspoon Salt, 2 teaspoon Sugar
- Sprinkle ice-cold water over this flour mixture 1 tablespoon at a time and mix it using your hands till it comes together to form a dough ball. The amount of water depends on the brand of flour too. If you add too much water, then add extra flour and adjust accordingly. You may also use a food processor to complete the above two steps.¼ to ½ cup Ice cold water
- Warp the dough in plastic wrap and keep it in the refrigerator for about 30 minutes.
STEP 2 - Prepare The Filling
- In another bowl, add blueberries, cornstarch, sugar, vanilla extract, salt, lemon zest, lemon juice, and toss. Here you can adjust ingredients as per taste depending on the sweetness of the fruit.3 cups Blueberries, 2 tablespoon Cornstarch, ⅓ cup Sugar, 1 ½ teaspoon Vanilla extract, ⅛ teaspoon Salt, Zest of lime, Juice of ½ lemon
STEP 3 - Assemble The Galettes And Bake
- Preheat the oven to 400 degrees F.
- Unwrap the dough onto a floured surface and divide them into 3 balls to make 3 galettes.
- Working one at a time, adding extra flour as needed, use a rolling pin to roll each ball about 1/16 to ⅛th inch thick. Carefully transfer this to a parchment-lined baking sheet. Alternatively, you can make one galette of 12-inch or14-inch round or 6 mini galettes.
- Divide the blueberry filling into 3 galettes at the center of the dough leaving 1 inch on the edges so that it can be folded up to encase the filling.
- Gently fold the crust edges up in an overlapping fashion and pleat the dough. Make sure there are no cracks.
- Brush the folded galette crust with egg wash or water or milk, and then sprinkle it with sugar.1 large Egg, 3 tablespoon Sugar
- Bake for 25 to 35 minutes or until the crust is golden brown and the fruit is bubbly. Baking time varies depending on the size, thickness of the galette. Transfer the galette to a wire rack and let it cool completely.
