    Strawberries and Cream (Mexican Fresas con Crema) is the simplest, best and delicious no bake dessert one can make. The combination of fresh whipped cream and strawberries is truly a treat! This can be prepared in under 10 minutes and is about 400 calories per serving.

    About Strawberries and Cream

    Coming back to strawberries and cream also known as strawberry parfait or strawberry fool, I call this the best lazy dessert recipe. I have a good reason to say that. Weekends are the time when I am usually lazy and I really don't feel like cooking and baking. I love to just sit and relax with my loved ones.

    My family loves dessert and it is only weekends we get to sit and spend some time together eating and chatting. On one such weekend, to satisfy sweet cravings for all of us, I ended up preparing this quick dessert specially because strawberries were in season.

    My husband says that this is a popular food choice among tennis fans during Wimbledon Grand Slam. See FAQs for more information. This recipe is also called as Strawberries Romanoff where some variants use sour cream instead of whipped cream. If you combine sour cream, evaporated milk, heavy cream, sweetened condensed milk, and vanilla, and pour this mixture over strawberries, you get Mexican Fresas con Crema.

    Fresh strawberries are available in plenty in the Farmer's market and nearby grocery stores where I live. When it is peak strawberry season, I make sure to get a large batch of these sweet nature's goodness and prepare different delicacies. I must say that this dessert is one of the best way to enjoy the fresh strawberries.     Ingredients

    • Strawberries - pairs really well with cream. Use strawberries that are juicy and sweet. You can also use frozen strawberries to make this dessert any time of the year. You can use a variety of berries if you prefer.
    • Sugar - helps to enhance the sweetness of the strawberries. When strawberries are tossed in sugar, it extracts the liquid from the strawberries making the dessert more flavorful. Use powdered sugar or confectioners sugar if needed.
    • Heavy Cream - adds a rich taste and creamy light texture to this dessert. Use whipping cream, half and half, condensed milk, or a combination of these if preferred.
    • Vanilla extract - add sweet flavor of vanilla to the dessert.

    Step by Step Recipe

    Step 1 - In a large bowl, add strawberries, sugar, vanilla extract and mix well. Keep this aside for 10 mins (preferably 1 hour) so that the juices are released from the fruit. If you are in hurry you can skip this or used powdered sugar.

    Step 2 - In another bowl, whip together heavy cream, sugar, vanilla extract till you get medium stiff peaks. This dessert tastes the best when served chill. Arrange strawberries and cream in layers and keep in refrigerator till you are ready to serve. So this is perfect as a no-bake and make-ahead dessert!

    Expert Tips

    1. You can use any type of cream of your choice. Some love to combine sour cream, condensed milk, cream cheese, mascarpone cheese, etc., to make delicious and decadent strawberry and cream parfaits.
    2. Strawberries and cream dessert tastes best when served chill.
    3. Substitute sugar with confectioners (powdered) sugar in the recipe if needed. 
    4. For easy whipping, make sure the cream, bowl, and whisk are cold.
    5. Use full-fat nut-based (coconut milk) or plant-based (soy milk) for a dairy-free dessert.
    6. For a quick shortcut, instead of whipping heavy cream, you can use a cool whip (canned whipped cream), which is readily available in grocery stores.
    7. Make sure sugar completely dissolves when mixed with strawberries before layering it as a parfait with whipped cream.
    8. Garnish Ideas - Add a drizzle of strawberry syrup, or add a spoonful of strawberry compote, or add freshly sliced strawberries on top for extra flavor and visual appeal. You can also garnish with fresh mint leaves or basil.

    Storage and Make-ahead Instructions

    You can store strawberries and cream dessert in the refrigerator for up to 24 hours.

    As it contains fruit, this dessert is not ideal for freezing.

    How to remove the leaves and stem of strawberries?

    One option is to cut off the top using a knife. But to retain the shape of the strawberries, remove the leaves and run a knife around the stem (white part) in the shape of a cone and discard it.

    Why do people eat strawberries and cream at the Wimbledon?

    The origins of strawberries and cream at Wimbledon Open Grand Slam event can be traced back to the early 1900s (1877 to be precise), where it is thought that King George V introduced this delightful combination. Moreover, strawberries had gained significant popularity as a fashionable and sought-after food item during that period.

    As this tennis tournament is usually played in June-July months, they happen to be the strawberry season in Britain, and thus this delicacy continues to be served at Wimbledon. Each serving of Strawberry and Cream costs £2.50. Approximately 10000 litres of cream and 28000 kilograms of strawberries are used every year to make this dessert at the Wimbledon.
